A few weeks ago, I made creamed spinach, and it was pretty good. I got the recipe from epicurious.com. Here it is if anyone is interested...

1 1/2 lb of baby spinach (or frozen spinach)
1/2 small onion, finely chopped
2 tbs unsalted butter
2 tbs all-purpose flour
1 cup plus 2 tablespoons warm milk
2 tablespoons freshly grated parm cheese
1/2 tsp. salt

cook spinach in 1 inch of boiling salted water in a large pot, covered, stirring once or twice until wilted (1-2 mins) Drain and rinse under cold water. Squeeze small handfuls to drain water, then coarsely chop.

cook onion in butter in a small heavy saucepan over a low heat, stirring until soft (4 mins). Whisk in flour and cook, stirring (2 mins) Add warm milk and simmer, whisking about 3-4 mins. Whisk in parm cheese and salt. Add spinach and cook until heated through.

It is actually easier than it sounds, but the only change I'd make is maybe substitute some of the milk for some cream. This is definitely not a low fat recipe!!

I am half Italian & we eat fish on Christmas eve, this post made me hungry! We will be serving lobsters this year along with alot of the goodies mentioned here. I can't wait!!
