Re: ROZ!

this is how i was TOLD to make it

DO THIS THE DAY BEFORE YOU COOK IT!!!

make a bunch of holes to the pernil and stuff it with buttload of fresh cilantro and chopped up garlic.
rub some oil over it and rub some adobo seasoning all over it. dont go to crazy with it cause you dont wan it to taste salty. put it in a roasting pan cover really great with foil and put that thing in the fridge.

NEXT DAY

take the pernil out and let it get to room temp. pre heat the oven to about 275. yes yes i said 275.
get a baking dish and fell it up with water. put the water(bottom rack) and pernil (top rack) in the oven. let that thing cook for about 7-8 hours!!!

every few hours make sure there is still water in the baking dish.

my family likes the fat to get crusty and eat it. if you have any interest in that take the foil off and set the oven to about 400. it could take about 10-15mins for it to get right. just keep an eye on it you dont want to burn it.

when you take it out of the oven let it sit for a few minutes. trust me when i tell you, you will not even need a knife to tear this thing apart. lol

GOOD LUCK!!

i need to try this in my crockpot one day
