Just start calling local dance places. Most of them offer wedding lessons and I'm sure they'd be able to teach you whatever dance you want.

Matty T's in Deer Park used to have classes. Google country line dancing on long island and see what you can come up with. Worst case scenario, I can teach you. I know the basics.
