Salmon help!

Salmon help!

I bought this huge salmon fillet and I was going to grill it using a lemon/butter/basil sauce recipe I had, which of course I can't find.

Anyone have any grilled salmon recipes so I don't end up winging it and ruining the fillet???

Re: Salmon help!

Though it's not grilled, Latina511 posted a baked salmon recipe that I tried and my family LOVED, if you want to give it a shot.....

Nonstick vegetable oil spray
1/2 cup chopped shallots
1/4 cup drained capers
1 tablespoon chopped fresh dill or 1 teaspoon dried dillweed
1 1 1/4-pound skinless center-cut salmon fillet
1 tablespoon lemon-pepper seasoning
2 tablespoons (1/4 stick) butter

Lemon wedges

Preheat oven to 425°F. Place large sheet of foil on baking sheet. Spray foil with vegetable oil spray. Mix shallots, capers and dill in small bowl. Place salmon on foil; sprinkle with lemon-pepper seasoning. Spread shallot mixture over salmon. Dot with butter. Fold up foil edges to enclose salmon; seal.

Bake salmon just until opaque in center, about 28 minutes. Open foil; transfer salmon to platter. Spoon any juices over. Garnish with lemon wedges and serve.

Serves 4.

Re: Salmon help!

Annie ~ THANK YOU!

I found a recipe VERY CLOSE to the one I was planning on using on allrecipes.com!

Here it is...

Ingredients

2 cloves garlic, minced
6 tablespoons light olive oil
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped
2 (6 ounce) fillets salmon

Directions
1 In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a medium glass baking dish, and cover with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally.
2 Preheat oven to 375 degrees F (190 degrees C).
3 Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.
