Seating Chart

I am looking to do a seating chart/poster by alphabet rather than the traditional escort cards... I have a few questions that I am not sure about and I don't want to go and piss any of my guests off when I do this... So, if I have a couple, non married, two different last names, do I list them under their respective letter? And then what if I have a guest, who is invited with a guest.. if the name isn't provided, I will put Mrs. Jane Smith & Guest... BUT if they do provide a name, does the guest go under his/her respective letter? even if I don't know this person??? UGH SO CONFUSED!

How do you make it larger? Make a regular size in word and have staples blow it up?

I'm using Adobe Illustrator. It needs to be steady 300dpi or it will be fuzzy when blown up to poster size.

Oh yea I forgot you make everything lol i went to an invitation place today she had both names next to eachother and whoever you are friends with goes first. If they are married, obviously the guy. She had some with guest too but I would try and find out their name to make it more formal.
