Here are a few:

Shrimp Oreganato: Really easy and for those who don't know me I do not measure. I do everything by taste and what looks right. So here goes.

I usually use about 2 lbs of large shrimp.(cleaned and peeled)
In a small bowl mix about 2-3 TBS of bread crumbs. A lot of chopped garlic (and I mean a lot) about a TBS or more of oregano, salt and pepper to taste and crushed hot (red pepper to taste) Add enough olive oil to make it very moist and like wet sand. Pour bread crumb mixture over shrimps and coat them all well. Place shrimps in a single layer in a baking pan and broil until done on that side. Flip them over and let the other side brown just a little. Be careful because you do not want to overcook the shrimps so you have to keep your eye on them.

Meatballs: again I do not measure except for one thing how many eggs to add.
Depending on the amount of chop beef you use two eggs to the lb of meat. In a mixing bowl add chop meat with the eggs, a lot of garlic, parsley, a lot of grated italian cheese like Locatelli or reggiano, salt and pepper to taste. Now here is where I do something different than most others. Instead of adding breadcrumbs my mom and myself always add wet bread instead. My mom would soak stale Italian bread in water then squeeze out the excess take the crust off and add that to the meatballs instead. That eliminates that breadcrumb taste and makes for a moister better tasting meatball. Then fry in either olive oil or vegetable oil until brown and add to your tomato sauce to finish cooking.(P.S. you can use white bread too if that's all you have just remove the crust wet it, squeeze out excess and add to meat) Use your judgement as to how much to use. The bread should not overpower the meat, but should bind it together).

Here is a Barese recipe my mom always made.

Fried asparagus. Buy the large (thick) asparagus for this because they hold up better. Cut the stems and give them a quick boil to just soften them a little. Then put each stem one at a time in flour and coat it then directly into an egg wash and from there straight into the frying pan and fry each side until brown. Don't use too high a heat or you will burn them. It is a little time consuming because you do each one separately. You can also do this as an omlette too. If you do that then cut the asparagus into pieces and give them a quick boil too. Take approximately a dozen eggs beat them and add grated cheese, salt and pepper and the asparagus to them and make an omelette of it. It is simple and delicious.

Hope you like!
