Signature Photo Mat - Best way to display ??

Hey everyone!! Need some suggestions!!

FH and I will be doing a signature photo mat at both the church and RH. What would be the best way to display it, so guests could easily sign??

Table easel or lay it flat??

we had ours flat on a table...if it was on an easel there was the big chance of someone knocking it over...also our DOC made sure it was filled before the end of the nite...which was nice...
