Some Italian Recipes

My aunt was here from Italy a few weeks ago and I asked her to write out some recipes. Figured I would share but you have to promise to let me know if you make any of this stuff!!!

Tiramisu for 12 people
3 eggs
2 packages of savoiardi ( i think these are called lady's fingers )
6 tablespoons of sugar
make espresso
one container of mascarpone cheese
cocoa powder
whipping cream and extra sugar

1. beat the egg yolks with the sugar
2.beat the egg whites seperately until fluffy
3. beat the cream with sugar to taste - start with just cream in the mixer and slowly add teh sugar
4. add the yolks, whites and whipped cream to the mascarpone and mix
5. soak the lady fingers in the cold espresso.
6. in a pan layer the soaked cookies and the cream mixture - the top layer will be the cream mixture
7. put in the refridgerator and right before serving cover with cocoa powder

Re: Some Italian Recipes

Semifreddo alle mandorle for 18 people
* a kind of almond ice cream TO DIE FOR

3 eggs
1 liter of whipping cream ( i dont know how much that converts to LOL)
powdered sugar to taste
250 grams of almonds - i think this is a cup?

1. beat the yolks with 3-4 tablespoons of sugar
2. beat the egg whites until fluffy
3. beat the cream while slowly adding sugar to taste

4. put the almonds in the food processor and then add sugar - over VERY LOW HEAT - melt the sugar into the almonds. . . after the sugar has melted - lay the mixture out onto a cookie sheet ( with a little oil) until it hardens - after it hardens break up the mixture ( this is actually called TORRONE) and put it BACK into the food proc. for a rough chop

5. mix all the ingredients with HALF the torrone and then put it in a baking pan and put it in the freezer RIGHT AWAY
6. before serving, pour some of the remaining torrone and top and a squirt of Hershey's syrup

* this melts VERY quickly so we literally served it out of the freezer. . . cutting it and putting it back into the freezer LOL

She must have forgotten the extra glass of wine to drink while cooking ! They wouldn't let us do that at school haha...but I would have been way less stressed and lol the food probably would taste better!!!

That sounds DELICIOUS!!! I would suggest 2 glasses of wine...one for me and one for the recipe...haha...I'm convinced the food tastes better when I'm drinking wine and cooking!

Re: Some Italian Recipes

ooo these sound good - but why are they for random amounts of people - like tiramisu for twelve and ice cream for 18? lol

Re: Some Italian Recipes

sounds like I am reading my grandmothers recipe book....a little of this, a handful of that, a taste of this.....I LOVE IT!!!!!! I usually ask my mom or aunts to translate some of the recipes because I unfortunately never got to watch my grandma make them becasue i was only a few months old when she past on......I learned a lot of my italian cooking over the phone with my mom. I would tell her what was in the pantry, should would rattle of a few handfulls of this and that....walla dinner for me and 20 close friends.....god forbid a recipe for just myself.......us italians don't know how to cook for just 2 people....
