Spaghetti Squash!

Ok I have never heard of this until recently so I went and got one and I can not believe how cool it is!!!! I bought a little one because I wasn't sure if I would like it, and I can not believe how much 'spaghetti' comes out of it! The online nutrition says it should be 0 points but the sticker on the squash equals 1 point, either way it is a great alternative! If any of you have any ways that you eat this please share! It will be a good way for me to get more veggies in my diet! I feel like a loser for being this excited, but I know some of you ladies will be able to relate!

Hmm sounds good. Where do you get it from? I haven't eaten spaghetti in ages lol.

I used that site for most of my recipes just read the reviews they are usually right

Thanks ladies! I think I will sautee it with some evoo and herbs! But thanks for the recipes now I have a bunch to try!

Okay - so for dinner for 7 points. I make this ALL the time.

Vegetable Spaghetti Bolognese

POINTS® Value: 7
Servings: 4
Preparation Time: 20 min
Cooking Time: 30 min
Level of Difficulty: Moderate
Works with Simply Filling
We cut fat and calories from this recipe by substituting half of the ground beef with meaty-textured, high-fiber beans.


Ingredients

2 1/4 pound(s) raw spaghetti squash
1 pound(s) uncooked lean ground beef (with 7% fat)
1 cup(s) cooked kidney beans, rinsed and drained if canned
1 medium garlic clove(s), crushed
1 medium onion(s), chopped
1 medium zucchini, sliced
1 1/2 cup(s) mushroom(s), sliced
1/4 cup(s) canned tomato paste
14 1/2 oz canned tomatoes, whole, peeled and chopped
1/8 tsp table salt, or to taste
1/8 tsp black pepper, or to taste

Instructions
Cut spaghetti squash in half and scoop out seeds. Wrap each half in plastic wrap and microwave on high power until strands of squash separate when flesh is scraped with a fork, about 15 minutes. Set aside.


Combine beef, beans, garlic, onion, zucchini and mushrooms and cook on high power until meat is no longer pink, about 5 minutes. Break up meat with a fork several times during cooking.


Add tomatoes, tomato paste and herbs and season to taste. Cover and cook for 10 minutes more on high power.


With a fork, scrape out spaghetti squash to form strands. Divide squash between 4 plates and top with meat sauce.

OH! And sometimes I'll take a point off (so for a 6 point dinner) and make Jenni-O Ground Turkey instead of the beef and it tastes the same!
