You really need to go and try them out for yourself. We went mattress shopping a few months ago thinking we'd get a firm with pillowtop. Wound up being WAY too mushy/soft for me so we got one of their firmest (I *think* inthe F series???). LOVELOVELOVE it.

I have the Sandleheath (I know I spelled that wrong ~ sorry!),and it's a nice cross between soft and firm.

We bought the 'C' Series Pillow Top .. depending on the store you shop .. Sleepy's, Rockaway Bedding, etc .. the name is different .. but it's the same mattress.
They get pretty expensive the farther into the alphabet you go ... but we thought this was a truly comfy mattress for the money .. we also liked the 'B' Series, though it was firmer and without a pillow top .. and of course the 'S' Series Pillow Top we tested also felt nice .. but not so nice that it justified the price difference ... for us.
