Stuffed Pepper suggestions please!

Hey girls,
I'm making stuffed peppers tonight [maybe] but I don't have any chopped meat at home.
So I'm trying to think of something I can substitute that for...

Anyone have any unique recipes for this? I'll be using rice for sure. But aside from this, I'm clueless Definately have never cooked a meal in my life until I got married

ive used turkey meat before-- add alot of worcestershire sauce to it and it'll taste like ground beef

also FYI... cook it longer than you think--- for some reason it stays really 'wet' and you almost have to over cook it

stuffed peppers is an interesting phenomenon. If you eat german, turkish, or iranian stuffed peppers, they're all about 95% the SAME. so wierd. It's always some mix of chopped beef, diced onion, and rice (maybe some yellow split peas and dried fennugreek in the persian version), stuffed in the raw peppers, the 'tops' put back on, and boiled in a diluted tomato sauce (the turkish version may have some cayenne in there)
