Tex Mex Meatloaf - recipe

Ok, I know some of you are thinking, 'meatloaf - ewwwww'. Well, I'm not a big fan of meatloaf either, but this recipe makes the best meatloaf I've ever had.

Tex Mex Meatloaf

1 lb. ground turkey
1 cup uncooked oats
3/4 cup salsa
1/2 cup corn
1/2 cup chopped onion
1 egg, slightly beaten
1 tsp. chili powder

Combine ingredients, form into loaf shape, and bake in loaf pan at 350 for 50 - 55 minutes or until internal temp is 170. You can pour some salsa and corn over the top too and serve with extra salsa on the side.

Thanks! I'm going to make it this weekend!

Turkey might have as much fat as 90% lean beef but it still has less saturated fat.
You can use ground beef in this recipe if you want but cook until internal temp is only 160.

I, unfortunatly, don't cook. Not that I don't because I can't, well, at least I hope I can, but because I still live with my parents, and so does Matt. I get home late (8:30-9:00) and food is usually made already, and I just heat it up. I don't want to cook in Matt's kitchen because I am uncomfortable.

I need to get into it, this looks like a good recipe to start with.

Any more good 'beginner' recipes?

Yes, this is definately a good beginner recipe. I know I have more; I'll have to go through my recipes and see what I can dig up for you.

One thing I can think of is pork tenderloin. I made one the other night and FH tore it up! It was a pre-marinated one - teriyaki flavor. You just brown it in a cast-iron skillet, then throw it in a 450 oven until the internal temp is 150.

Anyway, I'll keep my eyes open for more stuff for ya!

Thanks again! Don't go through too much trouble though! This just might motivate me to cook!
