Re: THANKS BETSY

I had a great time and I was glad to see everyone.

I have no idea why I would think that my sickness was behind me, when I was feeling crappy just the day before!!!! Kelly reminded me that she had the rice and then 2 seconds later, I went to get food and totally forgot to look for the rice. If I had rice and the crackers (that I never even touched) I probably would have been fine! Everything was irresistible, though.

Alright Jen, cough up that recipe for the banana cake!!!!!!!!!!!!!!!!!

it's super easy

One Pan Banana Cake

2 medium ripe bananas
1 cup flour
1/3 cup sugar
1 tsp. baking soda
1 tsp. vanilla
1/4 tsp. salt
1/3 cup oil
1 egg
1 tbs. orange juice
3/4 cup chopped nuts (optional)

Preheat oven to 350 degrees
Slice bananas into blender
Add egg, oil, vanilla and orange juice
Blend until smooth
In 9 inch square pan (i think I use 8 inch) stir flour, sugar, baking soda and salt (and nuts if you want) with a fork.
Add banana mixture and mix with fork
Bake for 30-35 minutes

Note- I add a few chocolate chips to the top or sometimes mix it in the batter and I find that it doesnt take the full 30/35 mintues so just keep an eye on it. I have never made it with nuts mostly because I never have them in the house.
