Re: Thanksgiving Dish?

I have a great one that's perfect for Thanksgiving!! I always make it, and it won 1st place in a cook off for best side dish. But the best part is it's delicious and couldn't be simpler.

Depending on the amount of people you have the ingredients vary, but it easy to figure out. This amount would serve 10-12 people.

3-4 bags of frozen corn
1/2 lb of Pancetta diced (if pancetta is to expensive a good bacon works great)
A medium bunch of scallions(green onions)
Salt
pepper
Paprika

Brown the bacon/pancetta until crisp, add the corn and heat through. Add a little salt, and pepper, and about 1 tsp of paprika. At the end of cooking chop the green onions (tops and bottoms) and mix in until heated. It's simple and delicious!! Everytime I make it people love it. I like it served hot but it's also good served warm. Try it you'll love it!!!

Re: Thanksgiving Dish?

My all time favorite Holiday dish is Broccoli -cheese casserole. I think it might be a southern thing, but it is soooo easy and soooo yummy. Here is the recipe.

1 package of frozen chopped broccoli
1 can of cream of mushroom soup
1 egg
1 cup of Mayo
1 cup diced onion
1-2 cups chedder cheese (shredded)
1-2 cups crushed chez-its

Defrost the broccoli. Mix soup, egg, mayo, onion, cheese and broccoli together. Bake until heated through (about 30-40 min). Top with crushed Chez-its and bake for 10 more min. Pull out of the oven and enjoy!!

It reheats great in the oven or microwave.

I have a really easy yummy recipe for corn casserole. I got it from foodnetwork.com

1 can creamed corn
1 can regular corn (drained)
1 package jiffy corn muffin mix
1 cup sour cream
1/2 stick melted butter (I dont use the butter tho you dont really need it)
1 cup shredded cheddar cheese

mix the corn, jiffy, sour cream, and butter together

pour into a greased pan.

bake for about 45 minutes or till golden brown on top.

sprinkle the cheese and cook for another 10-15 minutes or till cheese is melted.

Re: Thanksgiving Dish?

candied walnut salad (toss with dressing immediately before serving

1/2 cup walnuts
1/4 cup sugar
1 bag of 'spring mix' greens
1/2 cup dried cranberries
3/4 cup gorgonzola cheese
1 tablespoon of rasberry walnut vinegarette
1 tablespoon of white vinegar
1 tablespoon of olive oil

heat small skillet at medium and add walnuts and sugar. mix until sugar liquifies nad coats walnuts- color should be light brown. dump onto a cooling rack covered with foil. let cool & harden

in a big bowl, toss salad greens, cranberries, gorgonzola and walnuts (broken up if they are stuck together)

mix dressing, vinegar and oil in a separate container. right before you serve, mix dressing into salad and toss.

if you bring this to both parties, just make double the recipe and divvy it up in 2 separate bowls. when its time to serve, just mix with the salad dressing. consider making 2 bowls od salad and 2 litle containers for dressing

Re: Thanksgiving Dish?

I saw this on the food network and now I make it pretty often, it's a nice side dish. Really yummy.

Sauteed Green Beans w/ Tomato & Basil

1 1/2 pounds fresh green beans, trimmed
2 tablespoons unsalted butter
1 tablespoon olive oil
3 large shallots, thinly sliced
2 garlic cloves, minced
1 (14 1/2-ounce) can diced tomatoes
1/4 cup dry white wine
2 tablespoons thinly sliced fresh basil
Salt and freshly ground black pepper
Parmesan Crisps, recipe follows

Cook the green beans in a large pot of boiling water until just crisp-tender, about 3 minutes. Drain and rinse in cold water. Drain well; set aside.
Melt the butter and oil in a heavy, large skillet over medium heat. Add the shallots and garlic and saute until tender, about 2 minutes. Add the tomatoes and cook until heated through, about 3 minutes. Add the beans and cook until the juices evaporate and the beans are almost tender, stirring often, about 10 minutes. Stir in the wine and basil. Simmer 2 minutes longer. Season with salt and pepper, to taste. Transfer to a serving bowl, and serve.
