Tipping Topic (Again)- This is what my hall told me...
I went for my final last night. On our way out the door, the banquet manager said that it's typical to give $3 per person to the Maitre D, $100 to the Bridal Attendant and $100 to the Captain.
My first question was 'what's a captain?' he said it was the behind the scenes person making sure the white coats are doing what they're supposed to etc...
OKAY...when we walked out, my FH looked at me and said 'NO WAY are we gonna give the Maitre D $600! Are they crazy??' We can understand the $100 to the Bridal Attendant, but we're not sure about this captain too. We're paying a fortune as it is to have this reception and do we have to tip someone that makes sure the people are doing their job? Wasn't that included in the price? Come on!
Obviously I'm in the wrong business. If I can work 2 weddings on a Saturday for $600 a piece as a Maitre D, then why am I working a 5 day workweek???
What are you tipping? Martha Stewarts tips obviously don't apply to NY Catering Halls!!!
I NEED HELP AND ADVICE! My FH asked me to post this to find out what everyone else is doing.

our hall only gives us a Maitre'D...I flat out asked if there was anyone else I needed to worry about tipping....and this is what the Hall Manager (part of the LEssing family) told me:
'Typically $3 per guest is sufficient and you give it to the Maitre'D who then divides it up amongst the staff as he sees fit. You don't have to worry about it'

First off I've never heard of the term captain. But as far as the M'd tip, the norm is usu 1-2$ pp, depending on how happy you were with them. In may case I actually am going to be giving mine 300$, besides the fact that we are only having ~100 people. I am cuz he's a really nice guy and is throwing in lots of extra stuff for us, and is going out of his way to make us happy and relaxed; plus the fact that he was also the M'd for someone else in FH's family.

Where do these halls come off looking for more tips? Isn't the 18% gratuity we are paying enough?????

my contract says 18% SERVICE CHARGE....explained as that is the $$ that pays the waitstaffs' salary for the night

I believe “captain” is like a head waiter...
Does your contract include any fees and tips? What are they?
I am still confused about all this myself. My contract has a built in Maitre D fee that equates to about $4/person. My contract also has gratuity included. I don't believe I need to pay anything more, but I am not 100% sure.

Im also getting married at the watermill. The person i spoke with said we only had to tip the maitre d and the captain...he said 100 was average for the captain and didn't give us an estimate on the maitre d....however, he said the captian is the waiter for the bride and groom table and takes care of everything for them that night. Who knows....he said to tip after the wedding is over and it is whatever you feel comfortable with depending on service. Hope this helps

Want to hear one better.....
Mu hall told me the other night that average tips for maitre'd was $5 per person which meant their tip would come out to $1,250 !!!! I was like- You've got to be kidding me! She said that was just the average and we didn't have to give them that much if we didn't want to, or we could give more. Darn right I'm not giving them that much. Are they nuts or what!? Plus the bridal attendant and captin. I may take out a loan just for tipping.

Insane...this is nuts. Like someone said, the guy would have to work 2 nights a week to be pulling in over 50k a year. (based on $600 worth of tips per party)
Depending on how I feel, he'll either get 100 or 200. $2.00pp is sufficient, imo. It depends on how good he is. I'm not tipping captains, they can be paid out of the 18%. I will tip the bridal attendant 100 likely.

I guess I am luckier then I thought I was. My hall didn't include the 18% in my contract and they told me that the staff's pay is included in the per head price. They didn't think it was up to them to tell us what to tip and weren't going to require it.

Here's one that drives my FH insane -
Why are we taxed on the gratuity? Every place I went to gave us the pp amount, then added the gratuity and then threw on the tax to the total. What's that about?

yeah... that frustrates me... why tax the gratuity.. we dont at the restaurants we go to.. and arent the waiters/waitresses suppose to pay tax on it themselves

We pay the grat for the wait staff, cleaning folks, set up, break down.. blah
The M'D only said it's suggested a $2-$3 per person tip for M'd which would then be distributed for all wait staff and bartenders.
For us that's $200-$300 (or less). I told Jim I'd get angry if I see a tip jar out at the bar and if anyone tips the staff.. afterall isn't that what Im paying for?

So, the bartender doesn't need a separate tip. I was always lost on that one. I know guests shouldn't tip them, but do they share in the M'd tip or the 18% or does they get there own.

That is INSANE!!! I was told to that the 'average' tip was about $3-4 per guest. I totally ignored this! At that rate, my tip for the m'd would have been between $700-900!! That is highway robbery. We gave the guy a set amount of $300 at the end of the night which I think was totally sufficient. He ran things smoothly, but did nothing extraordinary - he did his job! And I think we paid enough for that to begin with! We gave the bridal attendant $150 because she was extremely helpful and deserved it!
