I can make a mean arroz con gandules....but the pernil...I've never tried and am scared to screw up my mom's recipe...

I can make a mean arroz con gandules....but the pernil...I've never tried and am scared to screw up my mom's recipe...

the trick is...you have to line the pan with foil...season the pernil and grind up olive oil, garlic, adobo, cilantro together to make almosta paste...then make small stabs in the meat and put that paste into the stab holes...cover it up and cook it...and for the last 15-20 mins uncover it and do 1 more light dusting of adobo on top to make the cuero (skin) crunchy.

i also used sofrito and a very little bit of sazzon...
