Re: tofu recipe?

as a vegetarian i have to be completely honest with you and say im not a fan of tofu.

There are a few recipes that are pretty outstanding though that i do love.

For breakfast....Tofu scrambles with TJ's soy chorizo and mushrooms mixed in.

And for dessert- PB Tofu pie

both of these are vegan

If you want recipes ill post.

Re: tofu recipe?

ill post my fave recipes from VegWeb.com that are both delicious and super easy. If you want to know where you can get some of this stuff let me know....(nutritional yeast, ect). I know i had a hard time finding some stuff when i first converted but i stock piled once i did find it.

The Best Breakfast Scramble Ever!

Ingredients:

Cheez sauce:
1/2 cup flour
1/2 cup nutritional yeast
1 teaspoon garlic powder
2 cups water
1 teaspoon yellow mustard
4 tablespoons or less of vegan margarine
Stir fry:
1/2 onion
1/2 green pepper
1 tub drained and crumbled extra firm tofu (not silken style)
cooking oil
turmeric (optional)
salt and pepper to taste

Directions:

Make Cheez Sauce:
Mix first 3 ingredients together in sauce pan. Add H2O and mix thoroughly. Heat on Med until thick and bubbly. Remove from heat and add mustard and margarine (I like Earth Balance). Set aside. *I got the recipe for this sauce from this site (cheesy enchiladas)*

Stir Fry:
Saute up some onion, and green pepper in oil. When they are good and soft, move them to the sides of the pan and form an empty circle in the middle for your tofu. Add more oil to the middle of the pan, then add your drained, crumbled tofu (don't use silken, use extra firm). When it starts to get golden, mix in the peppers and onion and keep frying. You can add some turmeric for color if you like.

When it looks like you could eat it, add the nut. yeast sauce and mix it all in to coat until that becomes golden brown too. I saute this for another couple of minutes. You might not need all of the sauce. I save the leftovers for pizza or nachos.

Add salt and pepper to taste (this makes all the difference!)

Eat! This is SOOOOO good and it’s great on toast or English muffins (I use Matthew's brand). I don't miss eggs at all after discovering this!

Serves: 3-4

Preparation time: 20 minutes

Taco Casserole

Ingredients (use vegan versions):

1/2 package of Boca Burger meat substitute
1 package taco seasoning (check ingredients)
water
1 15-oz can corn
1 small can tomato sauce
totilla chips
1 15-oz can of beans (refried or black)
1/2 onion diced
non-stick cooking spray
2 cups grated soy cheese (or regular cheese if you want)

Directions:

Spray pan with non stick spray. Warm the meat substitute a few minutes. Put in onion and taco seasoning, using the amount of water called for on the taco seasoning package. Cook for a few minutes, add tomato sauce and corn. Cook a few more minutes.

Put chips on bottom of a deep 9 inch casserole dish (crunched a little bit, not too small). Pour mixture over chips, then cheese, then more chips, mixture, cheese. The mixture should be the last layer on the casserole. Then put a layer of beans and more cheese.

Bake at 350 degrees for 15-20 minutes until hot. Very yummy!

and this one will be sure to satisfy your husband meat & potato needs

Meat Eating Husbands Love This Shepard's Pie

Ingredients (use vegan versions):

4 or 5 russet baked potatoes, peeled and cooked
2 teaspoons olive oil
4 cloves garlic, minced
1 medium onion, chopped
1 cup mushroom or vegetable broth
3/4 cup plain soymilk
8 oz. slice mushrooms
1 head broccoli, chopped or grated, stems and all
2 carrots, chopped or grated
2 celery ribs, chopped
1 teaspoon cornstarch plus 1 teaspoon flour
1 tablespoon nutritional yeast
2 handfuls French fried onions

Directions:

I got a version of this recipe from my friend Becky. I've altered it a bit to my own tastes. Her meat eating husband loves it so I figured mine will too. Made it last night and got many compliments from my husband!

Mash cooked potatoes with as much soymilk as you need and lots of vegan buttery spread to make them nice and creamy. Add some salt and pepper and a sprinkle of garlic powder.

Heat the oil in a large pan and saute the garlic and onion over medium heat until soft and translucent. Add the broccoli, carrots, mushrooms and celery and cook until veggies start to wilt.

Add the broth and soymilk along with the cornstarch and flour. Let the mixture come to a boil, stirring frequently. Sauce will thicken up a bit. Season with salt and pepper if you need to. When all the vegetables are cooked, remove from heat.

Spray a 8'x8' baking dish with nonstick oil spray and spoon the vegetable mixture onto the bottom. Cover with the potatoes and smooth them down. Sprinkle the top with nutritional yeast and French fried onions. Heat in oven for 10 minutes or so until top is slightly firm and onions are browned.

Serve with garlic toast or fresh bread. Enjoy!

Another way to prepare this is to spread half the potatoes on the bottom of the dish, add the veggies on top, then spread the remaining potatoes on top of the veggies. Either way it is delicious!

Serves: 6

Preparation time: 30 minutes

I've got tons of faves...and all of these recipes are open to interpretation. I add things here and there....get creative!

BTW....if you use VegWeb make sure to only sort through 5 star reviewed items....there are a few 4 star ones that are really good too but anything less than 4 id just stay away

Re: tofu recipe?

I LOVE tofu and since I don't eat any meat/fish/chicken its a good thing I do. I recently got this veggie stir fry mix from trader joes. It comes with the sauce and everything. I throw the tofu in the skillet first and let it simmer in a little olive oil then I throw in the veggies and lastly the sauce. FH LOVED it! I need to sock up on the veggies its super easy and really good.
