Ok, FH's friend from HS is coming for the weekend. FH's parents are also coming for the weekend. I need some veggie meals that everyone will enjoy. Or some that I can make for FH's friend then add meat to ours.
1st: most vegitarians are used to having to deal with this situation...so don't stress yourself too much...just don't mix meat into anything...keep it separate...
**you can do speghetti and Meatballs and make Tofu balls(smae recipe as meatballs...just with tofu) I bet the others eat the tofu as well...DH loves them...just don't cook them in the same pan...
**does she eat fish? you could do a nice baked one
**caesar salad...grill some chicken and let people add it if they choose...doesn't even have to be caesar...you could make a salad bar and have everyone make their own...include some types of proteins for the veggie...(does she eat eggs?)
**tacos (again you can do a taco bar) make sure there is taco meat...and refried beans...
ETA: **potato pancakes...you can also serve them with chopped hard boiled eggs...chopped onions...apple sauce/sour cream...and if you want to get really fancy Cavier!
**baked ziti? you can easily make in advanced too

Re: VEGETARIAN COMING FOR THE WEEKEND - HELP
Quick note on caesar salad... it's made with anchovies! Not vegetarian friendly (unless she/he eats fish). If she/he is vegan you're in for a bigger challenge, but yabbobay was right... most of them are very used to being the minority!
Check out www.vegweb.com for ideas... tons of recipes there.
You can always do pasta with veggies, garlic & olive oil, too... (that was my favorite when I was vegetarian).

Re: VEGETARIAN COMING FOR THE WEEKEND - HELP
I am a vegetarian, and I am so used ot there not ebing much for me to eat, so even if you make a steak, just make a couple of sides, potaote, rice veggies, I love just eating sides. Also there are alot of meat substitutes, Boca sausage, chicken nuggets, pork cutlets, etc.
yuck anchovies...see I wouldn't include it in my own salad

Re: VEGETARIAN COMING FOR THE WEEKEND - HELP
There got to be some pasta/salads you can make as well.
Penne alla Vodka (minus proscuitto - can substitute peas or mushrooms)? This is always a crowd pleaser.
Pasta Primavera?
Pasta Salads - I make one with spinach, tomatoes, feta, black olives and penne - then a dressing of garlic, oil and vinegar and basil. I chill that and then grill chicken beofre serving and add on top. It is great even as a min course cold. You can put the chicken on only those that like it? I have seen similar with orzo instead of penne.

Re: VEGETARIAN COMING FOR THE WEEKEND - HELP
I'm vegetarian, so is DH, and I love to cook. FM an idea of what you'd like to make and I'll try to set you up with some great recipes! Will you want Italian, Mexican, etc. Will they eat meat substitutes (like fakin' bacon and crumbles(crumbled veggie burgers that are sold crumbled to be used instead of chopped meat))? Some vegetarians are put off and/or offended by them. What about eggs? Are they vegan? I know I usually bring food when I go somewhere so that I am prepared. Feel free to FM!!! And please don't stress too much over it, we always find a way to 'make do'. Your caring will show.

This is a favorite quick lunch kind of a thing...you can buy eggless mayo at most grocery stores (near where they sell tofu in produce) or give them regular mayo if they eat it. Leave out the cheese if they are vegan.
Mama's Best Broiled Tomato Sandwich A broiled sandwich, made of fresh season tomatoes, with an Italian taste. A perfect match for soup. Prep Time: approx. 10 Minutes. Cook Time: approx. 5 Minutes. Ready in: approx. 15 Minutes. Makes 2 servings. Printed from Allrecipes, Submitted by kat -------------------------------------------------------------------------------- 2 tablespoons olive oil 2 tablespoons balsamic vinegar 4 ripe tomatoes, sliced 3 tablespoons mayonnaise 1/2 teaspoon dried parsley 1/4 teaspoon dried oregano 1/4 teaspoon black pepper 3 tablespoons grated Parmesan cheese, divided 4 slices bread, lightly toasted
Directions 1 Preheat oven to broil. 2 In a shallow bowl, whisk together the olive oil and vinegar. Marinate the tomatoes in the mixture, stirring occasionally. 3 Meanwhile, in a small bowl, combine mayonnaise, parsley, oregano, black pepper and 4 teaspoons Parmesan cheese. Spread mixture on each slice of toasted bread. Place marinated tomatoes on 2 slices and sprinkle with remaining Parmesan cheese. 4 Place on a baking sheet and broil for 5 minutes, or until cheese turns golden brown. Serve immediately, open faced or closed.

You could also make these with the TVP crumbles (sold with the veggie burgers in some grocery stores) if they eat meat substitutes. Then you could make some with chopmeat for the rest of your guests...just remember which is which!
Stuffed Peppers Green bell peppers stuffed with a mixture of rice, textured vegetable protein, cheese and tomato sauce. Omit the cheese for a vegan variation. Serve with additional tomato sauce, if desired. Prep Time: approx. 25 Minutes. Cook Time: approx. 45 Minutes. Ready in: approx. 1 Hour 10 Minutes. Makes 4 servings. Printed from Allrecipes, Submitted by Karen C. Greenlee -------------------------------------------------------------------------------- 1/2 cup uncooked white rice 3/4 cup water 4 green bell peppers 1 onion, chopped 4 tablespoons olive oil 8 ounces textured vegetable protein 2 tablespoons chopped fresh parsley 2 cups tomato sauce 4 ounces shredded mozzarella cheese salt to taste ground black pepper to taste
Directions 1 Combine rice and water in a small saucepan. Bring to a boil, reduce heat to low, and simmer for about 15 minutes. 2 Preheat oven to 400 degrees F (205 degrees C). 3 Cut tops off peppers, seed insides, and arrange peppers in a large baking dish. Chop usable portion of the tops. 4 Heat oil in a large skillet over medium heat. Saute chopped peppers and onions in oil until soft. Stir in textured vegetable protein and parsley. Reduce heat to low, and continue cooking for 5 minutes. Mix in cooked rice and 1 1/5 cups tomato sauce. Season to taste with salt and pepper. Spoon the mixture into the peppers, and top each with remaining tomato sauce. 5 Cover, and bake about 45 minutes. Uncover, top each pepper with mozzarella cheese, and bake until cheese is melted.

A different kind of burrito, but all might enjoy!
Addictive Sweet Potato Burritos Once you've had one - you'll want another. The recipe is a little different from most burrito recipes, but I've had many, many requests for it. Serve these with sour cream, chopped green onions and salsa. For vegan burritos, omit the cheese and sour cream. These may be made ahead of time, individually frozen, then heated. For an interesting variation, try deep frying these tasty burritos. Prep Time: approx. 25 Minutes. Cook Time: approx. 12 Minutes. Ready in: approx. 40 Minutes. Makes 12 burritos (12 servings). Printed from Allrecipes, Submitted by Karena -------------------------------------------------------------------------------- 3 teaspoons vegetable oil 1 onion, chopped 4 cloves garlic, minced 6 cups canned kidney beans, drained 2 cups water 3 tablespoons chili powder 2 teaspoons ground cumin 4 teaspoons prepared mustard 1 pinch cayenne pepper, or to taste 3 tablespoons soy sauce 4 cups cooked and mashed sweet potatoes 12 (10 inch) flour tortillas, warmed 8 ounces shredded Cheddar cheese
Directions 1 Preheat oven to 350 degrees F (175 degrees C). 2 Heat oil in a medium skillet, and saute onion and garlic in until soft. Stir in beans, and mash. Gradually stir in water, and heat until warm. Remove from heat, and stir in the chili powder, cumin, mustard, cayenne pepper and soy sauce. 3 Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese. Fold up tortillas burrito style. 4 Bake for 12 minutes in the preheated oven, and serve.

Re: VEGETARIAN COMING FOR THE WEEKEND - HELP
if they can eat dairy products, how about an easy vegetable lasagna, or baked ziti? you can also do pasta primavera if they dont eat dairy.
you can do anything for breakfast (thats the easiest meal for us--omelettes, fruit, pancakes, waffles, cereal, etc)
or how about rice, beans, vegetables (in any combination)
there's a lot you can do..... good luck!
