How far in advance do you setup time to finalize the menu?

i went on the 8/11 to finalize and we're getting married on 9/19. call and ask for christina to set up an appt.

I emailed Brian at the Watermill and he said I would be getting a letter in the mail about a month before the wedding to come in and Finalize everything.
