My mother always breaded and fried them. Then serve with lemon wedges.

I put asaparagus spears length wise in a baking dish and cover them with flounder fillets. Then I either cover the fish with chopped onion, lemon, breadcrumbs and a bit of butter and bake it, OR cover the fillets with a can of reduced fat cream of asparagus soup and bake it.

Either way, it's good.

I buy this ready made lobster meat stuffing and I smear it on top of the fillets and then I roll them up, sprinkle with lemon, pepper and paprika and put a tiny dollop of butter over each and bake for like 30 minutes - DELISH.

I broil the fillets with salt, pepper, fresh lemon juice and a little olive oil.
Then I make a quick sauce by melting 2 tbs butter and then adding one tbs flour. Whisk this a few seconds until smooth (add more or less flour until its a paste). Then, add chicken broth (or vegetable broth) until it gets a nice consistency. Add loads of chopped parsley, a few squeezes of lemon and some pepper (no salt because the broth has lots of it).

Look at my post called 'here's a good fish recipe'. The recipe calls for tilapia but I actually used flounder. I just fried it in a pan and put the sauce on top. Yummy!
