chicken franchaise or chicken scampi are both easy to make chicken stuffed with fresh mozzarella and prosciutto or you can cut the chicken into small cubes and make a pasta with small pieces of chicken

Chicken fajitas!
Sautee some onion and peppers and put aside. cut the chicken into small strips and season. Put some oil in a pan and cook the chicken. Then mix the onion/pepper with the chicken.
Serve with fajita wraps, sour cream, salsa Its sooo good! DH loves it...we use whole wheat wraps and fat free sour cream

The back of a French's fried onion can has an amazing chicken recipe:
Lay the cutlet out and stuff it with fresh veggies, roll up, top with cheese and bake
or
stuff with stuffing roll them up top with cheese and bake.
Really you can be as creative as you want this

Re: what can i make for dinner tonight?
Mince about a half of a small onion and about 2 cloves of garlic and sautee it in a little bit of evoo. The cube chicken and throw it in.
Off to the side: boil a pound of pasta (your choice) and steam broccoli heads
once the chicken is cooked turn heat to medium and add a can of chicken stock to the chicken, garlic and onion, let sit for a a few minutes, then add a cup of white wine, and the broccoli and turn the heat on high and let boil for about 3 minutes. If the sauce is too thin, throw in a table spoon of butter.
Drain pasta and put it in a serving dish and then pour the chicken and broccoli in it's sauce over the pasta. serve it with some garlic bread and salad and voila. it's so easy to make and it doesn't take a long time!!
It's one of DH's favorite dishes

Here is a silly question:
I see alot of recipes uses white wine, but what kind of wine do you use? Where do you get it? I am new to the cooking thing.

it depends...some recipes call for drinking quality wine, when others call for cooking wine. I usually use recipes from foodnetwork.com, they are very detailed for things like that!

Re: what can i make for dinner tonight?
marinate chicken in a puree of
small jar of roasted red peppers small can sliced black olives 1 cup italian dressing
Put all three ingredients in blender and puree
I usually freeze half the marinade for future use.
marinate chicken for a few hours or over night. Reserve some marinade to pour over cooked chicken. Serve with rice or pasta.
Yummy!!!!

I personally always use drinking wine, i dont buy cooking wine. I guess it depends what i have at home at the moment lol. I do notice a difference though depending on the type of white whine i use. But some recipes will specifically say a dry white wine or tell you exactly what type. When I use pinot grigio in a meal i like it better. One time i just had some white bottle of wine in the house so used that and it was ok but not as good as when i use pinot grigio.
One time DH got so mad at me when he caught me using his white wine that is a little pricey. But oh well, less for him to drink
