What R U Making???

What R U Making???

This will be a first for me .. I've told my parents I want to cook dinner Christmas Eve! What was I thinking???!!!

Actually, I'm kinda looking forward to it .. but I'm not really sure what I want to make.

I definitely want to try the Chicken Lollipops that I saw once on Food 911 ... and I want to make my mini beef wellingtons .. only really mini .. not like when I tried it last time. But those would be appetizers.

I also know that I want to make my mashed potatoes .. and maybe corn and creamed spinach. I was also thinking of doing mozzarella and tomato over greens.

What should I do for a main course???

I was thinking of a Pork Tenderloin stuffed with apple raisin stuffing .. King Kullen sets up pork chops with this stuffing for cooking .. and they are yummy .. and their butcher said they could set up a Pork Tenderloin for me.

I'm stuck for ideas, though. My mom will be cooking beef Christmas night .. so I was gonna try to avoid doing a beef dish .. and I was toying with the idea of cornish hens .. but that would be too involved for eating because of all the bones. Turkey seems too much like Thanksgiving .. so .. I'm stuck.

Any ideas???

ETS: There will be 6 of us .. and dessert will be Deep Dish Apple Pie with Breyers Vanilla Ice Cream.

We are making turkey this year.

But in years past we have done:
rack of lamb, grilled with a yummy maple sauce (from FoodTV website)
roast prime rib
rosemary porkloin

Not doing Christmas this year.

But with the menu you described, I would definitely do a lion of pork or rack of lamb. But probably the pork. I wouldn't like the apple raisin stuffing inside though. I know a bunch of people in my family do not eat apples and I don't eat raisins. Even when they can be picked out - I still feel like the flavor goes into the food. But if you know your guests will like it - I would go with it. If not, I would a normal loin of pork and then a apple dressing or stuffing on the side.

I think the loin of pork but you could also just go the Italian route - pasta or stuffed shells, etc and then some kind of cutlet. Sides could just be bread and salad.

I am making reservations!!! Great option for those who barely cook like me! FH and I are having a nice night in the city!!! Good luck with the cooking, sounds like you are more than ready!!

ETA: Now I really have to know what chicken lolipops are!!

Re: What R U Making???

First .. thanks to everyone for the suggestions ... I definitely do not want to go the Italian route .. because I wanted to make all those other dishes I was planning. As for the apple/raisin stuffing .. it's stuffing, with just a hint of apple/raisin .. and I do think it's fine with everyone .. thanks for the heads-up, though.

Finally .. the Chicken Lollipops...

Take the drumette section of chicken wings .. cut around the thin tip, and push the meat down .. this exposes the bone to look like a lollipop. Then dip in a mix of honey and mustard .. followed with seasoned bread crumbs .. stand the lollipops up on a baking sheet, and bake away!
