I was wondering... for favors that are intended to be one-per-couple, how do you make sure that everyone isn't taking their own, without having everything set on the guest tables all night, or having them double as escort cards?
I'm thinking of doing edible favors of some sort, like jars of jam or some kind of box full of treats for two. Is there some kind of tactic to making sure every individual isn't walking out with one? How is everyone else doing one-per-couple favors handling this issue?

I am doing one per person - but I can look per couple for you tomorrow in this etiquette book I have. :)

Thats a good question. You would think people would be able to do the math, or notice that there's only one every other place setting, but who knows haha.

I think you should double the favors as escort cards. Couples only expect one for the both of them, so they won't be looking for another one.

This! If you can somehow attach a tag to them with the table number, I think that would be the best idea. Although, if you have them placed between place settings, I think your guests will get the idea that it is one per couple.

Re: What's the etiquette here?
I have another cute idea I wanted to do for escort cards that does not mesh with putting them on the favors, and I am worried that they may end up being too large to leave on the table without it looking cluttered! This is a predicament!

you can ask the Maitre'D to bring out your favors later on and distribute one per person OR per couple, depending on what you choose.

That's such a good idea! Do they do that kind of thing? I guess it doesn't hurt to ask! Thanks Melissa!
