it usually says it in your contract.
Flowers - usually a week/month before or possibly that day,
Phto - seems to be about 2/3 paid before the event and the final payment whne you pick up your proofs
Limo - cash that day, check/credit card a little before
hall - about a week before or so

Every vendor is different, some are two weeks before, one week before, day of.
It should say it on your contract.

it depends: here are my vendors:
florist is a week before
photographer is two weeks before
hall is one week beofre- certified check or cash
DJ is one month before
video is two weeks before
limo- up to the day before
florist is a week before
photographer is two weeks before

I don't know exactly when I have to pay each vendor... but I know it is pretty close to the wedding day itself. In fact, I think you can pay some places the day of if its cash... check your contract...

Florist- 3 weeks before
Photo- 3 weeks before
Hall- 2 weeks before
limo- 1 week before

My DJ and Photographer got final payment at the wedding, my florist was 2 days before.
