I don't know about the response envelopes but I believe the addresses need to be spelt out completely so I don't know if it would be the same for the responses

Re: Which is the correct address wording?
It depends on how formal you want it. If you are writing 'Two Thousand Nine' on your invitation, then I would write out 'Seventy-First Street'. If you have 2009 on your invitation then 71st Street would be fine. Either way is fine. Nobody is going to look at it and say, that's not correct.

If you do decide to write it out, the correct way is:
Seventy-first
Hyphenate the numbers and the f in first is lowercase.

Re: Which is the correct address wording?
I'm a bit of a stickler for correct style rules. Here's the deal:
in formal writing all numbers are spelled out. If you want to be formal, therefore, it would be Seventy-first Street.
In business writing street numbers under 100 are to be spelled out. So it would still be Seventy-first Street, but if you lived on 101st Street - you would write 101st Street,
The US Postal Service likes the less formal approach, which would be 71st Street.
For wedding related stuff, I prefer the more formal approach - Seventy-first Street.
