OK, we're 5 days past the RSVP date and still have 50 people who haven't responded. I'm stressed beyond belief with all I still have to do and am dreading making all these phone calls. Am I supposed to, or is this something I can delegate to the moms?

I would give the list to the mom's. People from your side go to your mom and people on his side go to his and give them a deadline of like 2 or 3 days to get it done.

My mom & MIL chased people down that were older, like aunt & uncles, etc. The cousins & our friends I called.

I am in the same predicament and my mom said I should call my friends and FH can call his and our parents will call the family.

This is what I am doing. I gave them the names of there guests. My mom is doing her side, my dad his side and my fiance parents his side. This way it is less stressful for you and you do not have to make all the calls.
