Zucchini patties/fritters anyone?

I have an idea what to put in, but I would love quantities:
zucchini, bread crumbs, eggs, and parsley.
Then they are fried in olive oil.

Would you used boiled zucchini, or just shredded raw?
Would you also add mint? dill?

I hope someone can help. Thanks.

I would probably just add salt and pepper.
I hate dill and mint.
I only like dill pickles.

Sounds really delicious. Let us know how they come out.

It came out delicious.

Grate 2 large zucchini and 1 med-large onion.
Toss well with salt and place in a strainer for half an hour. Squeeze out as much liquid as possible.

Add
1/3 cup grated cheese
1/4 c feta (crumbled into small bits, I didn't measure so judge for youself)
1 1/2 cups Italian dry bread crumbs
3 - 4 eggs (depends on size)
some fresh mint/ dill/ parsley
pepper/ garlic powder

Heat olive oil in a teflon saucepan and drop in batter with a teaspoon. It will be like pancake batter. I didn't make them too large bec. they were browning too fast and I wanted the inside cooked.

Enjoy.
