My spinach pie recipe if anyone wants it

Here's my recipe. My Greek uncle Steven Diapoules used to own a Greek restaurant and this is basically what he told me..

6 boxes frozen chopped spinach
1 lb (at least IMO) of Feta - in a brick
2 bars of salted butter
1 box phillo dough (needs a day to defrost if bought frozen)
1/2 onion (give or take)
1 bunch of scallions (give or take)
1 cup of Parmesan Cheese (at least IMO)
1 very good pastry brush - that doesn't lose its bristles - like mine did


First of course defrost spinach & cook it
Then (SO IMPORTANT) squeeze towel dry and put aside!

Chop onions and scallions into tiny pieces
put one bar butter in frying pan melt and saute onions and scallions until glossy.

Mix with spinach

When its cool add feta crumbled and Parmesan
I wait until its cool because I don't want it to melt just yet)

Melt one bar of butter in coffee mug in micro

Lay out phillo dough - be careful - Id compare it with wet toilet paper - tears way too easily
I cover mine with Saran wrap and then a moist towel - trying to keep it moist because it can also dry out and crack easily.
Take out one layer and a time and brush it with butter
You decide how many layers to use. I do 2 or 3.
Then slice downwards into 5 strips

Put Spinach mixture at top of strip and fold downward like you would a flag - triangle

Put on cookie sheet

Then using pastry brush - butter tops

Bake at 350 degrees until light brown

** tip so Spinach doesn't stick to your hands butter your hands first.

Its my favorite thing to eat in the world. Believe it or not when I was on college I made this - 6 boxes of spinach and all and at it in ONE day all by myself. I do not recommend this

ETA: You can add 2 eggs to the recipe if you want, but I dont like to because #1 I dont care for it that way and #2 then you cant pick at the mixture while you're making it

This makes 2 - 3 trays of appetizers.

Sounds soooo yummy and super fattening, but IMO, if you're gonna eat it at all, eat the one you really want......just not the whole thing!!!!!!!!!!!!!!!!

How can something so healthy like spinach turn into something so fattening?? Just add dairy!!!!!

I know right! Its terribly fattening!!

BTW this makes about 2 - 3 trays of appetizers

Obviously if you want to make them bigger just cut less strips.

Let me know if any of you make it. Its awesome!

Also if you want to skip the hard part, forget the phillo dough. You can just serve the spinach mixture - Its soooooo good!
