Carrot cake recipe?
Anyone have a good one? I want to make it for Easter but there are so many on the internet that I'd rather pick one that someone has made before. TIA!

My mom just made one with almond flour and olive oil...it was delish!If you're interested I can get it for you.

Carrot CakeCan't speak to the mascarpone cream, my mom didn't make it.
Its very moist all on its own, but I spread a thin layer of Nutella on my piece and it was delish
