chilli

dh and I went apple picking and also go red and green peppers...........the hot ones.............
............i want to make chilli with them but dont have any good recipes...........your help would be much appreciated!!!

Here is my Ultimate Chili recipe that I included in this year's NW cookbook, I'm actually making it tomorrow. It doesn't really call for peppers, but you can probably use them in lieu of the diced tomatoes with green chilis. Bacon is optional, I'm skipping it tomorrow myself.

Ultimate Chili

Ingredients:

2 lbs ground sirloin
3 slices crispy bacon
1/2 white onion, chopped
3 large cloves garlic, chopped
2 cans crushed tomatos
1/2 can water
1 can Pinto beans
1 can Kidney beans
1 can Diced Tomatos with Green Chile
2 packets McCormick Low Sodium Chili Seasoning
Chili Powder
Paprika
Cumin
Black Pepper

Directions:

Brown meat with onion and garlic. Drain fat. In large stock pot or pasta pot (recipe yields a LOT of chili!), combine crushed tomatoes, water, diced tomatos, beans, and all meat. Place on medium heat to start. Add chili seasoning, and chili powder, paprika, cumin, and pepper to taste. Simmer between medium and low, stirring on occasion for about 2 hours. Season throughout the process to taste. Serve with sour cream and cheddar, by itself or over egg noodles.

I cook my chili in a crock pot but im sure you can do it the reg way as well...

Slow- Cooker Chili

2 lbs ground beef, browned and drained
2 16oz cans red kidney beans, drained
2 14 1/2 oz. cans diced tomatoes, drained (I use the Del Monte Zesty Jalapeno)
2 medium onions, chopped
3 garlic cloves, crushed
2-3 tbs. chili powder
1 tsp cumin
1 tsp black pepper
1 tsp salt

1. Combine all ingredients in slow cooker
2. Cover. Cook on low 8-10 hours (I usually do it on high 4-5 hrs)

Variations:
* For more flavor add, cayenne pepper or a jalapeno pepper before cooking.
* Add 1 cup chopped green peppers before cooking.

PS: I don't suggest completely draining all the ingredients. There doesn't seems to be much liquid left when it's all said and done if you do.

I get soooo many compliments on this chili!

The only changes I make are that instead of tomato juice, I use about 30 oz of diced tomatoes. I buy two cans of diced tomatoes (14.5 oz each I believe). I also skip sugar and salt. You can add more meat if you want or more veggies to make it a bit chunkier. I usually use 2.5 lbs of meat and it lasts us about 3 full dinners. Enjoy!
