I have a made up recipe I use all the time and the pasta salad disappears:

1lb of tri-color pasta
1/2-3/4 bottle italian dressing of choice
1 cup cooked brocoli (cut up kind small)
A block of colby jack cheese cut into cubes
Sun dried tomatoes (in oil) cut up to pieces
Other things I sometimes mix in:
pine nuts
black olives

Cook pasta...let cool...mix it all together...chill and enjoy

trio color pasta
bottle of italian dressing
red onions diced
peices of fresh mozarrella

Mix all together.

I made a Greek Pasta salad (my friend's LOVE)

I dont really measure too much:

1 pound of penne pasta (cooked)
cut up a green pepper/or red
1 red onion
1 can of black olives
1 block of feta cheese
1 bottle of Greek vinigarette dressing

I use tri-color pasta, cut up onion into small pieces, use the peeler to make little carrot strings, cut green pepper into small pieces and pour ranch (or lite ranch) dressing. You can also add oilives, but we don't like those. And salt& pepper to taste I don't measure it at all. I just use what looks good and taste good.

It is also better to make everything the night before and just stir it up before serving.

I also like chopped scallions (instead of red onion, which I also like), black sliced olives and cherry tomatoes! I feel like making pasta salad tonite!

Michele, I like the idea of shredded carrots too.

I do what everyone else did, except I make my own dressing (this is for 1lb of pasta):

1/2 cup balsamic vinager
1 cup olive oil
1 Tbls. chopped garlic
1Tsp dried oregano
1tsp dried basil
1/2 cup grated parmesean cheese
1 tbls. lemon juice
salt/pepper to taste

Mix everything vigorously it with a whisk to incorporate before adding pasta and veggies.

Toss and add extra of any of the above ingredients to suit your taste.

When i am in a pinch, like i need it FAST.. i buy the betty crocker suddenly salads.. they have ceasar and creamy parm. and traditional potato!

they cook SOOO fast, and you can add your own veggies if you want..

I'm lazy, and I use McCormack's pasta salad seasoning. It comes in a little packet and you mix it with olive oil and white vinegar. I use cut fusilli pasta, and throw in grape tomatoes, broccoli, snow peas, black olives and fresh mozzarella. YUM!
