I need a good recipe...

Going to a friend's house for BBQ - she's making corn on cob, grilled chicken, etc., and I'm bringing a side dish.

Any recommendations?!??!

Re: I need a good recipe...

cold pasta salad? Or a green salad??

ETA: On Tuesday I made a pasta salad side dish for me and DH to have throughout the week. I used the barilla protein bowtie pasta. Once that was cooked and strained, I added some olive oil, fat free italian dressing, artichoke hearts, baby tomatoes, black olives, grated cheese, mozzarella balls, garlic and pepper....DELISH!

Re: I need a good recipe...

pasta salad - here's my fav:

1 lb. farfalle pasta
1/2 lb. string beans
5 tomatoes (like the vine ones)
10 basil leaves
2 cloves minced garlic
3/4 cup olive oil
salt & pepper

cook string beans, dice tomatoes, chop basil leaves and garlic. put into a bowl and add olive oil. add salt & pepper for flavor. chill for like 2 hours in the fridge. then cook pasta according to package and once done, pour the olive oil/veggie mix on top - toss thoroughly and serve at room temp!

Re: I need a good recipe...

In the summer, I make a pasta salad almost every week. DH and I use it as a side dish or take for lunch, so I try to use the protein pasta or multi grain and change up the veggies... so easy to make, filling and delish....

Re: I need a good recipe...

Another pasta salad if you want:

Bowtie pasta
Broccoli
Mozzarella
Italian Dressing

Cook the pasta, cook the broccoli just a little so it's a little softer, Chunk up the mozz - chuck everything together in a bowl with the dressing.

Re: I need a good recipe...

What about potato salad?!?!?!

Do they like spicy?!?! my family has this side called 'hot stuff' - it's hot cabbage and you can basically put it on anything. At BBQ's is a hit....

Re: I need a good recipe...

This is my favorite quiche

Frozen Deep dish pie crust (I use
Orinoke)
1-10 oz pkg frozen artichokes
1-8 oz mozzarella cheese block, diced
¼ cup grated romano cheese
4 eggs
pepper
½ cup pre-sliced pepperoni

Preheat oven to 350. Defrost artichokes and pat dry. Cut into quarters. Beat the eggs in a large bowl. Then mix in all of the remaining ingredients. Pour into the pie crust and bake for 45-60 minutes.

(Except I don't use frozen artichokes and I slice the pepperoni myself)

I do this but minus the string beans and put fresh mozzella= yumm
