Lower Fat Banana Bread
I saw this recipe and it looked pretty easy and good! I love banana bread but its very high in fat. This is lower...but not fat free!!
Nutritional info below!

Ingredients
2/3 cup white sugar
1/4 cup margarine, softened
2 eggs
1 cup mashed bananas
1/4 cup water
1 2/3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
Directions
1 Preheat oven to 350 degrees F (175 degrees C). Spray one 9x5x3 inch loaf pan with a non-stick cooking spray.
2 In a medium bowl, beat the white sugar and margarine or butter until smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until it is well blended.
3 Mix in the flour, baking soda, salt and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients.
4 Bake at 350 degrees F (175 degree C) for about 60 minutes. Bread is done when the top is firm to the touch and a golden brown color. Time will vary according to loaf size and oven type. When bread is removed from oven, allow it to cool on it's side for 10 minutes, then remove from pan and let cool on a rack. This bread is also excellent if you add mini chocolate chips or small fruit pieces to the mix just before baking.

There are definitely even lower fat alternative out there....the biggest problem that I notice w/this recipe is that it still contains margarine and eggs. I'll have to search for it, but there's a recipe somewhere that substitutes applesauce as the 'binding' agent instead of oil, margarine or eggs.BRB!

Here's one:Banana Applesauce Bread
2 c. sugar
1/4 c. water
2 c. banana, mashed
1 c. applesauce
3 c. flour
3 T. cinnamon
1 T. baking powder
1 T. baking soda
1 t. salt
1 t. vanilla
1/2 c. raisins, optional
1/2 c. nuts, optional (adding these will add fat)
Mix sugar, water, banana, and applesauce. Stir in flour, cinnamon, baking powder, baking soda and salt. Add vanilla, raisins and nuts. Blend well and pour into two loaf pans that are well greased and lightly floured. Bake at 350° for 1 hour or until toothpick comes out clean. Variation: Substitute 2 c. zucchini in place of banana for zucchini bread.

Claud...I didn't see yours...but Lisa...I tried your recipe...ITS FABULOUS!!
I packed my loaf pans though...so I made it in a 9x9 pan...for 30 mins...
