need good & easy vegetarian dinner ideas
My vegetarian friend is coming over for dinner tomorrow night ... last time she was over, we had pasta and salad .... i need a different idea for tomorrow ....oh, and it must be easy-ish cause i don't have time or patience to cook big fancy meals

You could buy some yummy vegetarian soup from TJ's or Panera, and then grab a loaf of some kind of crusty bread and some cheese, and make fancy grilled cheese.Pasta with garlic and oil with some sauteed mushrooms and broccoli.
Veggie fajitas
Marinate portabello caps in balsamic vinegar and a little olive oil overnight in the fridge, then grill them on the George Foreman grill...grill some red pepper slices too...melt a little mozzarella on the portabello caps, top them with red pepper, and put them on a toasted kaiser roll with a pesto spread. Serve with sweet potato fries (also easy, get them pre-peeled and sliced from TJ's in the produce section)

That sounds awesome ... but DH hates all shrooms (that *******) ... this might be a meal for me when he's away one day though

hmmm veggie lasagna sounds yummy too ... i'll ask DH if he prefers that or the meatloaf (which also sounded yummy & simple)

i'm sure you already have something picked but these are my favorite vegetarian meals:-Lasagna
-Vegetable Stir-fry over Rice
-Rice and Beans with Guacamole
-Nachos with lettuce, tomatoes, cheese and salsa
-Eggplant Parm
-Cheese Raviolis and Garlic Bread
-Squashes (butternut, acorn, spaghetti) with vegetables cut up and tossed in
-Penne Alla Vodka
-Caesar Salad
-Vegetable Pot Pies
-Vegetable Fajitas

everyone make their own taco! you can have rice, beans, onions/peppers, mushroom, soy meat, guacamole (yummm), salsa, cheese, sour cream, tomatoits fun!

just a comment on the meatloaf....not all vegetarians like meat substitutes. personally, i dont love food that actually tastes like meat (one of the reasons i gave it up, i dont like the taste). so i would just check with your friend before making it
