Recession Skillet...

....is how I would describe what I made for dinner tonight. Poor DH - he is such a good sport.

I crawled home from school...so exhausted...and was so tempted to order in but we are really watching our cash flow. DH will usually cook if I have stuff for school/work but he is swamped with school work too...

So, I threw brown rice, a can of tomatoes, chicken, black beans, corn and salsa into a skillet and heated it up.

DH asked what it was and I called it a 'Mexican Stew' with a straight face....then we both started hysterically laughing!

I owe him a really nice meal!

HI VAL

It was actually okay...would have been a lot better with cheese and sour cream but we didn't have any in the apartment! I mean, what isn't better with cheese and sour cream?!

I think it was more of the presentation...or lack thereof...that was the funniest part! It was very 'slop-like'...kinda like the contents of the burrito without the wrap!

LOL I was just thinking..add some cheese and maybe some sour cream would be delishhhh
