Knock You On Your Butt Jello Shots!

1 pkg Jello mix (any flavor)
1 cup water
1 cup of cold Vodka
(2-oz) pkgs of paper cups

Boil 1 cup of water. Once boiling remove from heat and stir in the Jello mix. Keep stirring for at least two minutes until the mix is completely dissolved. Stir in 1 cup of cold vodka. Pour the mixture into the small paper cups. Refrigerate for 4 hours or until firm. I usually arrange the cups on a cookie sheet before putting in the frig for easy management.

Note: I like the strawberry, grape and blueberry flavors(the darker colored Jellos) because they don't taste as strong, but if you like that, go with the lighter colored Jello (ex.pineapple). These shots go down very easy and are a guaranteed crowd pleaser, but beware they sneak up on you and can knock you on your butt!!!

Cheese Tortellinmi with Broccoli, Tomatoes and Garlic

Total time: 25 minutes
Serves: 4
Calories: 660 per serving

3 tbsp unsalted butter
2 lbs broccoli, stalks removed, heads cut into small florets
4 cloves garlic, thinly sliced
1 1/2 lbs frozen cheese tortellini
3 plum tomatoes, seeded and diced

Bring a large pot of salted water to a boil. Heat 1 tbsp butter in a large skillet over medium. Add broccoli and garlic; season with salt and pepper. Cook, tossing occasionally, until broccoli is crisp-tender, 6 to 8 minutes (if skillet is too dry, add a little water). Cook tortellini in boiling water until al dente. Drain, reserving 1/2 cup of the pasta water; return tortellini to pot. Add broccoli mixture, tomatoes and remaining 2 tbsp butter; season with salt and pepper, and toss gently to combine. Gradually, add enough reserved pasta water to create a sauce that lightly coats tortellini. Serve immediately.

Fish - Salmon Kabobs

Fresh Salmon (buy it the day you will make it)
Honey around 1/2 cup
Soy Sauce 1 cup
Sea Salt 1 tsp
Black Pepper 1 stp
Garlic 4-5 cloves grated
Sesame Oil 1 cup

You can use less ingredients or more for the marinade depending on how much fish you will be making.

Mix all the ingredients together to make a marinade. Let the fish soak for at least an hour in the marinade. Cut the fish up into small pieces & place them on kabob skewers. If you are using wood skewers make sure you soak them in water for a few hours so they don't burn. We have the metal ones from my grandmother I am sure you can still buy them somewhere they work great all summer for kabobs. Cook at a high temperature 450 until almost done, then hit them with the broil for a few minutes to make them nice & crispy, make sure to watch them as they can burn very quickly. This recipe is only good to make kabobs in the oven on cookie sheets or tin foil, they will fall apart on the grill.

I make Jasmine rice or thai peanut noodles as a side dish w/ these & a spinach salad.

Spinach Dip To Die For

1 (10-oz) cup of frozen, chopped spinach, thawed & drained
1 (16-oz) container of sour cream
1 cup Hellmann's mayonnaise
1 pkg. Knorr's Vegetable Soup Dip Mix
3 green onions, chopped

Squeeze out the excess water from the spinach and mix with all ingredients. Cover and chill for 2 hours.

Note: We usually hollow out a loaf of pumpernickel bread, fill it with the dip and use the excess bread for dipping. Veggies are great for dipping too.

Turkey or Vegetarian Chili - Crock Pot


1lb lean turkey meat (cook & drain) can omit for vegetarian dish
2 cans light kidney beans 14-16 oz cans
1 can dark kidney beans
1 can chick peas
1 can black beans
(You can use whatever beans you like, and if omitting the turkey use two or three more cans of beans instead.)
2 large cans of diced tomatoes 28 oz
4 cans of diced tomatoes w/ green chillies onions etc.. 15 oz
5 or 6 cloves of garlic grated
1/2 white onion grated

Add everything to your crock pot & cook on low for 8-12 hours. The longer it cooks the better it will be. Serve over brown rice, top w/ reduced fat shredded cheddar cheese, and a scoop of red fat sour cream.


* If you like your chili spicy you can use more of the diced tomatoes w/ chili instead of the plain ones. You can also add some chili powder, or red pepper flakes. This recipe will make a very mild chili.

Quick and Easy Chili Dip

1 (8-oz) pkg. cream cheese
1 (15-oz) can of chili, with or without beans
1 (8-oz) cup Kraft shredded Mexican cheese
1 (16-oz) pkg. Tostitos tortilla chips

In a baking dish spread cream cheese to cover entire bottom. Next empty can of chili and spread over the cream cheese. Sprinkle shredded cheese to cover and bake in 350' oven for 15-20 minutes or until bubbly.

Serve with Tostitos and enjoy!

Impossible Bacon Pie -

I use turkey bacon and I have pointed this for WW it is 6pts. a slice

I LOVE BACON!!!!

12 slices of bacon, crisply cooked and crumbled
1 cup shredded swiss cheese ( 4 oz)
1/3 cup chopped onion
1/2 cup bisquick
1 cup milk ( I use Skim)
1/8 Teaspoon pepper
2 eggs

Heat oven to 400 degrees. Grease a 9 -in pie plate. Sprinkle bacon, cheese & onion in pie plate. Stir remaining igredients until blended. POur into pie plate. Bake 35-40 minutes or until kinfe comes out clean. Cool 5 minutes. Makes 6 servings.

This easy, fast and good!!!

A neighbor brought this to our pot luck the other night and it was so fabulous, I asked him for the recipe. Made it myself today and it's just wonderful! (And not hard to make at all!) Best part is, since it's vegan, you can eat all the dough you want!!! I think the brownie batter would make lots of great other pastries as well. The recipe is completely vegan if you use vegan chocolate chips. Enjoy!


Raspberry-Chocolate Chip Blondie Bars

For the Raspberry Layer:
2 cups frozen raspberries
3 tablespoons tapioca starch (you can substitute arrowroot or cornstarch)
1/4 cup cold water
1/3 cup sugar

For the Blondie Layer:
3 3/4 cups all-purpose flour
1 1/4 teaspoons baking soda
1/2 teaspoon salt
1 (6-ounce) container plain or vanilla soy yogurt [I use vanilla]
1/4 cup rice milk [I use vanilla rice milk]
1/2 cup plus 2 tablespoons canola oil
2 cups sugar
1 tablespoon vanilla extract
1 cup chocolate chips

Preheat oven to 350. Lightly grease a 9x13 baking pan.

Prepare the raspberry layer:
In a saucepan combine all raspberry layer ingredients and stir until the tapioca starch is dissolved. Bring to a boil and then lower to a low boil, stirring often, for 5 minutes or until thickened. Remove from heat. [Try to time it so that the mixture doesn't cool off too much before using it below.]

Prepare the blondie layer:
In a mixing bowl sift together the flour, baking soda, and salt. In a separate bowl, combine the soy yogurt, rice milk, oil, sugar, and vanilla. In batches, mix the dry ingredients into the wet to form a dough. Set aside 1 cup of the dough and spread the rest in the prepared baking pan. Spread the raspberry layer over it. [The warmer the raspberry layer, the easier it is to spread.] Sprinkle half of the chocolate chips over the raspberry layer. Drop the remaining dough over the chips and raspberries. [I think it comes out best when you spread the remaining blobs of dough out as much as possible over the bottom layers.] Sprinkle the rest of the chocolate chips over that. Bake for 35 minutes. [I usually bake it an additional 2-3 minutes to make sure the inside is baked through.] Let cool completely before serving.

1 tbsp flour
1 1/2 tsp vinegar
1 (8oz) cool whip
2-3 cup diced apples

Mix pineapple chunks and marshmallows, set aside and refrigerate overnight

Next Day
In a sauce pan - egg, pineapple juice, vinegar, sugar, and flour - cook until slightly thickened. Set aside to cool
When it cools off combine with marshmallow mis then mix in apples. Layer cool whip on top.

THIS IS YUMMY!!! Great for a summer bbq!!

Allegra and Mike's Easy Traditional Guacamole:
Appetizer
Serves 4

Ingredients:
2 ripe avocados
1 vine ripened tomato, diced
2 cloves fresh garlic, minced then smashed (to release oils and flavor)
3 tablespoons of yellow onion, finely diced
1 small handful fresh cilantro (use mainly the leaves, not the stems) roughly chopped
The juice of 1/2 a fresh lime
Plenty of salt and a pinch of fresh ground black pepper

* If you like thing spicy, you can add as little or as much fresh finely chopped jalepeno. Make sure to remove the seeds first and just use the meat of the pepper. The seeds are where all the heat is!

Mix all ingredients together with clean hands, or a pestle in a metal bowl. Garnish with a sprig of cilantro and enjoy right away with your favorite tortilla chips!

No its missing, lol, I hadn't added it in yet after our FM. I will fix that later. I have to copy and paste the recipe into the category in the book first, otherwise I will screw up my system.

its 16 pages and I am only on poultry... but its going to be a great book... keep them coming girls. If its super long we will figure out a way to get it printed.

Oh, I have a yummy appetizer recipe...


Pizza dip

One tub of Cream Cheese with Chives
One green pepper
One small can of tomato sauce (or about 1/2 cup)
1/2 cup chopped up pepperoni
1/2 cup mozzerella cheese

Layer ingredients in a casserole dish (mozzerella on top). Bake on 350 degrees for about 20 minutes or until cheese on top starts to bubble. Serve with crackers, bread, breadsticks - whatever you like! We like the garlic toast rounds they sell in the bakery section of Waldbaums.

Fresh Tomato Salsa

1 tablespoon ground cumin
3 large tomatoes (about 1 &1/2 lbs), cut into large chunks
1/3 cup chopped fresh cilantro, including some stems
1/3 cup chopped onions
1-2 tablespoons seeded & finely chopped pickled jalapeno peppers
2 tablespoons fresh lime juice
3/4 teaspoon salt

In non-stick skillet, toast cumin over medium-high heat, stirring frequently, for about 3 minutes or until cumin is fragrant & color has darkened. Transfer cumin to a med. bowl. In a food processor, chop the tomatoes, in batches & add the cumin. Add the cilantro, onion, jalapenos, lime juice & 3/4 teaspoon salt & toss until combined. Cover the salsa & let stand @ room temperature for 30 minutes to blend the flavors.
