anyone have a recipe for Chickpea salad

you know, the stuff that you get at the diner.. with chickpeas, onions, oil/vinegar

help!

I do

This is one of my favorites -- so easy to make too!! Like the salad they make at the Greek restaurants

Mediteranean Bean Salad

INGREDIENTS:
1 (15.5 ounce) can garbanzo beans, drained
1 (15 ounce) can kidney beans, drained
1 lemon, zested and juiced
1 medium tomato, chopped
1/4 cup chopped red onion
1/2 cup chopped fresh parsley
1 teaspoon capers, rinsed and drained
3 tablespoons extra virgin olive oil
1/2 teaspoon salt, or to taste

DIRECTIONS:
In a large bowl, stir together the garbanzo beans, kidney beans, lemon juice and zest, tomato, onion, parsley, capers, olive oil and salt. Cover, and refrigerate for about 2 hours, stirring occasionally, before serving.

It can also be easily adapted to a Tex-Mex style by changing the lemon to lime, parsley to cilantro and adding ground cumin and/or chili powder! Be sure to add the lemon zest (or lime zest) as this really adds a ZING to the salad!'

you are the greatest!!

Hey,

I made this recipe a couple of times. It is so good and easy to make. The recipe below is only for 1 serving so you may want to double or triple it.

Ingredients
Serves 1
1/4 cup canned chickpeas
1/2 cup quartered cherry tomatoes
1/4 cup crumbled feta
1 tablespoon fresh lemon juice
2 teaspoons olive oil
1 teaspoon dried oregano (may want to add more as per taste)
1/8 teaspoon salt
Ground pepper

Directions
Rinse and drain chickpeas.
In a bowl, combine chickpeas with tomatoes, feta, lemon juice, olive oil, oregano, salt, and a pinch of pepper.

omg these are great

totally random--but i had no idea that people called them 'chick peas' until like the age of 17. i always knew them as 'garbanzos'
