Re: Apple Crisp receipe...
I found this recipe, not sure how good it is but those 3 ingredients but cold butter for the topping are what will give you the crumb-cake like topping. I am going to search for more recipes...
From cooks.com: EASY APPLE CRISP About 8 c. sliced apples 2 tsp. cinnamon 1 tsp. salt 1/2 c. water CRUMB TOPPING: 1 1/2 c. flour 2 c. sugar 2/3 c. butter, softened Mix cinnamon, salt and water into apples. Place in a 9 x 13 inch buttered cake pan. (Fill to 1/4 inch from top of pan.) Mix together topping ingredients and sprinkle loosely over the apples.
Bake 350 degrees approximately 40 to 50 minutes or until brown.

Re: Apple Crisp receipe...
This recipe is better because it has the right topping.
From epicurious.com:
Cinnamon Apple Crisp 1 cup firmly packed golden brown sugar 1 tablespoon ground cinnamon 3 1/2 pounds Granny Smith apples, peeled, cored, sliced
1 cup all purpose flour 1 cup sugar 1 cup (2 sticks) chilled unsalted butter, cut into pieces
preparation
Preheat oven to 450°F. Butter 13x9x2-inch glass baking dish. Combine brown sugar and cinnamon in large bowl. Add apples and toss to coat. Transfer apple mixture to prepared dish.
Combine flour, 1 cup sugar and butter in medium bowl. Using pastry blender or fingertips, blend ingredients until coarse meal forms. Spread flour mixture evenly over apples.
Bake crisp 20 minutes. Reduce oven temperature to 350°F. Bake crisp until apples are tender and topping is golden brown, about 30 minutes. Let stand 15 minutes before serving.
Good luck. Feel free to FM me with any questions.

Yeah I've seen a bunch like those too-it's nice because it's a little healthier. I think the second recipe I posted will be closest to the consistency of the topping that you want. I like a very basic filling too-not a lot of 'goop' with the fruit.
