Re: Cupcake Fever

This post just made my day lol

I have a delicious recipe for a chocolate cupcake that I am actually making for a wedding :) They are dense, and chocolately...sooo yummy. I actually use Magnolia Bakery's vanilla buttercream frosting recipe with these, it is to die for.

This recipe is from the test kitchen.

Dark Chocolate Cupcakes
Makes: 24 Cupcakes
Prep Time: 10 minutes
Total Time: 45 minutes plus cooling time
Quick to make and very chocolatey, these cupcakes can be put together without the use of an electric mixer. This recipe can be easily cut in half to yield 12. You will need 3 cups of frosting to ice 24 cupcakes.
16 Tablespoons (2 sticks) unsalted butter, cut into 16 pieces
4 ounces bittersweet chocolate, c hopped
1cup Dutch-processed cocoa powder
1 ½ cups all-purpose flower
1 ½ teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
4 large eggs, at room temperature
2 teaspoons vanilla extract
1 ½ cups sugar
1 cup sour cream

1. Microwave the butter, chocolate, and cocoa together, whisking often, until melted and smooth, 1 to 3 minutes. Set aside to cool until just warm to the touch.
2. Meanwhile, adjust an oven rack to the middle position and heat the oven to 350 degrees. Line two muffin pans with cupcake liners. Whisk the flour, baking powder, baking soda, and salt together in a large bowl and set aside.
3. Whisk the eggs and vanilla together in a large bowl. Slowly whisk in the sugar until combined. Whisk in the cooled chocolate mixture.
4. Sift one third of the flour mixture over the batter, then whisk it in. Whisk in the sour cream. Sift the remaining flour mixture over the batter and whisk until completely incorporated (the batter will be thick).
5. Fill the cupcake liners about two-thirds full. Bake until a wooden skewer inserted into the center of a cupcake comes out with a few crumbs attached, 18 to 22 minutes, rotating the pans halfway through baking.
6. Let the cupcakes cool in the pans on wire racks for 5 minutes. Remove from the pan and let cool completely on the racks before frosting about 1 hour.

My carrot cake recipe is also good for cupcakes :)

Just saw these on CCTTC blog today!! So cute

If I had to pick a cupcake to eat right now, it would be a chocolate cupcake with chocolate icing, with some yummy crunchy stuff on the top....omg...I want something sweet now.

You and I officially work in mirror images of Manhattan. I'm downtown and you're midtown but we're close to all the same things

On the train this morning, this chick was walking around trying to give out some kind of coupons. I said, 'No thanks.' She then told me it was a coupon for a FREE Crumbs cupcake. Hell yes, I took the coupon!!!

now I'm in the mood for cupcakes.
There's a new Crumbs on 3rd Ave in the 50's - within walking distance of my office.
Might just have to take a stroll during lunchtime today. Get some exercise to counter the calories.

Seriously, between this and the donut that was posted yesterday....I may just have to eat a whole half dozen fron dunkin donuts on my lunch hour :(

I'm proud of myself that I never got the donuts from the vending machine yesterday.
Only one package was left this morning.

Now with the talk of easter candy and cupcakes, my willpower is faltering............
