I've been on a cupcake making craze lately. Next I'm going to try French Toast cupcakes, chocolate chip cookie dough cupcakes and cookies n cream cupcakes. DH is a sweets-a-holic.

I see red x's for some of them but the ones I do see look soooooo yummy!

I fixed them... They are saying 'Tania's Baby shower' b/c picasa is being fickle! lmaoo. sorry.

Cup-cheesecakes

* 15 graham crackers, crushed
* 6 tbsp. of butter
* 2 (8 ounce) packages cream cheese, softened
* 1/2 cup white sugar
* 1 teaspoon vanilla extract
* 2 eggs

1- Preheat oven to 325 F, place an empty roasting pan on a shelf in the oven 2/3 of the way up. Set a tea kettle up for hot water (you are going to bake them in a 'water bath')

2- Line muffin tin with foil liners.

3- Melt the butter and mix well with the graham crackers. Spoon approx. 1tbsp of the mixture into the base of the foil liners, and pat down.

4- Mix cream cheese, vanilla, and sugar with an electric mixer on medium speed until well blended. Add eggs, and mix well. Pour over crackers, filling 3/4 full.

5- Place the cupcake pan into the roasting pan. Pour the hot water from the kettle into the roasting pan until its approx. 1/2 up the sides of the cupcakes.

6- Bake for 27 minutes. Turn off the heat, leave the oven door ajar, and leave them in the oven for another 30 mins. Remove from pan when cool. Chill overnight.

I dizzled chocolate sauce on mine but you can leave them plain or spoon your favorite pie filling on top.

Fluffernutter cupcakes

I cheat and used vanilla cake from betty crocker! lol I followed the directions to a tee as far as making the batter.

As for assembly I did it a little different.

* Nilla wafers
* peanut butter chips
* mini marshmallows

1- Crush nilla wafers until they are crumbs.
2- Spoon approx. a tbsp into each lined cupcake tin, 1/3 full.
3- Scoop batter into each cup, making each one 2/3 full.
4- Drop 4-5 peanut butter chips in each tine.
5- Scoop add't batter into each cup, making each one 3/4 full.

Bake as directed on the box (until a toothpaste dipped in the center comes out clean). Let cool.

For the frosting you will need:
* 2 cup marshmallow fluff
* 1/2 cup peanut butter
* 2/3 cup butter or margarine — softened
* 1/2 teaspoon vanilla
* 1/2 teaspoon salt
* 2 2/3 cup confectioners’ sugar
* 4-10 tablespoons milk

1- In small bowl with mixer at low speed, combine marshmallow creme, peanut butter and butter until blended.
2- Increase speed to medium.
3- Beat in confectioners’ sugar, alternately with milk, adding just enough milk to make frosting smooth and spreadable.
4- Beat in vanilla.

Frost cooled cupcakes and garnish with mini marshmallows and peanut butter chips

Cupcakes are everywhere now. I should've tried to open up my cupcakery years back when I first thought about how cool it would be to own a bakery that only serves cupcakes.

I would've been a millionaire by now :( lol

DH said there is a cupcake bakery opening or already open next door to Crest Hollow in Woodbury. I'll have to ask him about it.
