So my apt is in the process of being painted, new sheet rock in some places, re-carpeted etc. lol. The floors are pulled out the bed is in the living room the kitchen has our dressers in it etc etc. It's crazy over at our place.
So...I am looking for something very easy to make tonight that involves CHICKEN. I have chicken breasts that I need to cook but don't know what to make. Something good, quick, easy and that does not require alot of prep since I have no room in my kitchen haha
THANKS!

Re: Dinner Ideas
we grilled chicken breast last night then cut it up and made pizza with it. We used a Boboli crust, crushed tomotoes, sauteed mushrooms and peppers, mozzarella and the grilled chicken...it was sooo yummy!

Super basic, but, why not Chicken Cutlets and Bread Balls? Have you ever had Bread Balls? They are so amazing. hehe
Can I ask what a bread ball is? LOL you've got my mind going in all sorts of WRONG directions I am sure
Haha. Sorry I took so long to reply. Bread Balls are:
2 cups of Bread Crumbs 3/4 cup Parmesan Cheese 1-2 Eggs Milk
Combine all ingredients except milk. Mixture will still be dry. Add milk until mixture is no longer dry. Should be sticky. (hehe) Shape mixture into ball shape and flatten them to about 1/2 to 1 inch thickness. Fry on both sides.
My mom used to put these in the pasta sauce with meatballs. I prefer them with chicken cutlets though.
Oh this is so funny! My mom makes what she calls 'the bread' when she does her chicken cutlets and I guess its similar. She basically takes the leftover breadcrumb mixture (which she has already added parm cheese and some other seasonings to) and puts it in with egg. She mixes them together until its at a consistency where she can lift it and place it in the frying pan. Sounds kinda like what you are talking about

Re: Dinner Ideas
easiest chicken recipe!
cut the chicken into bit pieces and cook in a pan stovetop
cook any kind of pasta (i use spiral)
in a small sauce pan dump a can of cream of mushroom and 1/2 a can full of water, add about 1/2 a cup of parm cheese and heat until it makes a creamy (but still thick) sauce.
