Dinner Ideas

So my apt is in the process of being painted, new sheet rock in some places, re-carpeted etc. lol. The floors are pulled out the bed is in the living room the kitchen has our dressers in it etc etc. It's crazy over at our place.

So...I am looking for something very easy to make tonight that involves CHICKEN. I have chicken breasts that I need to cook but don't know what to make. Something good, quick, easy and that does not require alot of prep since I have no room in my kitchen haha

THANKS!

Re: Dinner Ideas

My grandmother always made her quick and easy chicken cacciatore.

Pour garlic and parmesan cheese over the chicken until the top is white. Pour sauce over it and put it in the oven for about an hour.

Quick and easy!

I don't know if this would take more time, but you could take chicken, cut it into cubed pieces, cook some rice and add some frozen or canned veggies and mix it all together with some cream of mushroom soup. One of my favs! My mom usually just makes it on the stove top, so you can heat it all up in one pot.

Re: Dinner Ideas

What about grilled chicken salad; we cut up the chicken and put it in the salad. Or just grilled chicken with a vegetable on the side and salad? Same difference, but a little easier since chicken is already cut up. That's what my DH and I do a lot when we're looking for something healthy but easy to make. You could have a baked potato on the side too...that's pretty easy to make.

Re: Dinner Ideas

I made this the other night and it was super easy:

Take boneless chicken breast and slit them open so they have a pocket. Brown them lightly on either side in olive oil. While they are browning, in a bowl mix together 1 package of defrosted spinach, 1/2 cup of sour cream, 2 cloves of garlic chopped and shredded mozzarella cheese. After the chicken is slightly browned stuff the spinach mixture into the chicken. Place in the oven in a baking dish for about 15 minutes.

Re: Dinner Ideas

Can you run out to the grocery store? I have a recipe that I've recommended on here a few times and the girls seem to like it but it requires good seasons italian dressing mix (the powder) and I know a lot of people don't keep that in their cabinets. Here is the recipe:

Easy Parmesan Garlic Chicken

Ingredients

1/2 cup Grated Parmesan Cheese
1 envelope italian salad dressing mix (.7 oz makes 8 fl oz)
1/2 tsp garlic powder
6 boneless skinless chicken breast halves (about 2lbs)

Directions
-Preheat oven to 400F, Mix cheese, salad dressing mix and garlic powder
-Moisten chicken with water, coat with cheese mixture
-Place in shallow baking dish
-Bake 20-25 min or until chicken is cooked through

I like to run it under the broiler on low for 5 minutes so it gets really crispy

Re: Dinner Ideas

i like to marinate my chicken in italian dressing OR a mixture of EVOO, balsamic vinegar and honey - you can then dip it in bread crumbs

( got the honey recipe from Rachel - oe of my new faves! )

Re: Dinner Ideas

here is what i'm making tonight:

SHRIMP & CHICKEN

1/2 lb. skinless, boneless chicken breast
1 tbsp. butter
1 tbsp. olive oil
2 tbsp. finely chopped shallot
1 clove garlic, minced
16 med. shrimp, peeled & deveined
Lemon slices & lettuce leaves for garnish (opt.)
1 c. chicken broth
2/3 c. Marsala wine
1 tbsp. finely chopped parsley
1 tbsp. lemon juice
1/8 tsp. pepper
2 c. sliced mushrooms

With meat mallet, pound chicken to 1/4 inch thick. Cut into 8 pieces. In large skillet, over medium heat, melt butter with oil. Add shallot and garlic. Cook, stirring frequently for 2 to 3 minutes or until soft. Add chicken. Cook, stirring frequently for 2 to 3 minutes until chicken turns white.

Add shrimp and cook 3 minutes until pink. Remove chicken and shrimp; set aside. Add broth, Marsala, parsley, lemon juice and pepper to skillet. Raise heat to high and cook until liquid is reduced to 1/3 cup. Reduce heat. Return chicken and shrimp to skillet. Add mushrooms and cook 1 to 2 minutes longer, stirring to coat with sauce. Place mixture on serving platter. Yield: 4 servings.

Re: Dinner Ideas

tonight I'm making Chicked Alfredo. It is SOOO easy to make and incredibly delicious.

FETTUCINI ALFREDO SAUCE
6 tbsp. butter
1 1/2 c. whipping cream
3 to 4 c. fettucini noodles, cooked
1 c. shredded Parmesan cheese
Salt & pepper
Nutmeg
Melt butter until lightly browned. Add 1/2 cup of cream and boil rapidly until large shiny bubbles form. Stir occasionally. Reduce heat to medium and add noodles & cooked chicken to the sauce. Pour remaining cream and cheese a little at a time. Add salt, pepper and nutmeg to taste. Serve immediately. Noodles should be kept moist but not too liquid. Makes 4 to 6 servings.

Another easy chicken dish I make sometimes is fried chicken with Mac & Cheese. I like to make mine HEALTHY fried chicken though I do this by cooking the chicken in boiling water and THEN i proceed to dip it in Flour, Egg, and Bread Crumbs. This way it's only cooking in the oil for about 5 minutes rather than a half hour or whatever. Just a thought!!

I definitely will. We love trying new things. Do you cook it with anything special (like a specific side dish)?
