Dinner Ideas

Original post by cbcf

So my apt is in the process of being painted, new sheet rock in some places, re-carpeted etc. lol. The floors are pulled out the bed is in the living room the kitchen has our dressers in it etc etc. It's crazy over at our place.

So...I am looking for something very easy to make tonight that involves CHICKEN. I have chicken breasts that I need to cook but don't know what to make. Something good, quick, easy and that does not require alot of prep since I have no room in my kitchen haha

THANKS!

I copied this one - definitely gonna try it this week, if I can run to the store and get some of that dressing mix.

Let me know how you like it, I think it's DH favorite meal

I definitely will. We love trying new things. Do you cook it with anything special (like a specific side dish)?

I always make it with mashed potatoes that I throw some sauteed onion in but it'll really go with anything.

Can you run out to the grocery store? I have a recipe that I've recommended on here a few times and the girls seem to like it but it requires good seasons italian dressing mix (the powder) and I know a lot of people don't keep that in their cabinets. Here is the recipe:

Easy Parmesan Garlic Chicken

Ingredients

1/2 cup Grated Parmesan Cheese
1 envelope italian salad dressing mix (.7 oz makes 8 fl oz)
1/2 tsp garlic powder
6 boneless skinless chicken breast halves (about 2lbs)

Directions
-Preheat oven to 400F, Mix cheese, salad dressing mix and garlic powder
-Moisten chicken with water, coat with cheese mixture
-Place in shallow baking dish
-Bake 20-25 min or until chicken is cooked through

I like to run it under the broiler on low for 5 minutes so it gets really crispy

I adore this recipe! Love you Jess, for sharing it So yummy and so easy!!! The only thing I dont love when I do chicken in the oven is that it gets like wet... does that happen to yours too?

tonight I'm making Chicked Alfredo. It is SOOO easy to make and incredibly delicious.

FETTUCINI ALFREDO SAUCE
6 tbsp. butter
1 1/2 c. whipping cream
3 to 4 c. fettucini noodles, cooked
1 c. shredded Parmesan cheese
Salt & pepper
Nutmeg
Melt butter until lightly browned. Add 1/2 cup of cream and boil rapidly until large shiny bubbles form. Stir occasionally. Reduce heat to medium and add noodles & cooked chicken to the sauce. Pour remaining cream and cheese a little at a time. Add salt, pepper and nutmeg to taste. Serve immediately. Noodles should be kept moist but not too liquid. Makes 4 to 6 servings.

Another easy chicken dish I make sometimes is fried chicken with Mac & Cheese. I like to make mine HEALTHY fried chicken though I do this by cooking the chicken in boiling water and THEN i proceed to dip it in Flour, Egg, and Bread Crumbs. This way it's only cooking in the oil for about 5 minutes rather than a half hour or whatever. Just a thought!!

yummy I never knew alfredo sauce was so easy - Im gonna have to try this one!! thanks

Catie, I made this for Joey the other night and he was in love.

I grilled chicken then cut it up into pieces and threw it in a ziploc with some Franks Red Hot Sauce, then i took a whole wheat boboli pizza crust and put a layer of hot sauce, threw the chicken on it with some sliced onions and low-dat mozzarella cheese and threw it in the oven. it was so easy to make!

You can do this with BBQ sauce instead of hot sauce, i know you like bbq

oh yay I'm glad you liked it. I know what you're talking about with the wetness. If you use thinner cutlets that helps and if you just run it under the broiler for 4-5 minutes after you've already cooked the chicken it'll make it nice and crispy.

ugh - i feel u and my situation isn't even as extreme! We took apart our china cabinet & now there's a delay 'till the weekend with our new one..so we have EVERYTHING...glasses. china, bowls, everything that was understocked, etc..covering our table, counters, etc. & we have a teeny little apt! ANYWAYS,
something super quick & easy: i'll season the breasts w/ salt & a LOT of pepper and then pour two cans of stewed tomatos over them in a baking dish(u can do italian stewed or original depending on ur preference)... put small pats of butter over chicken.. bake at normal time & temp & baste frequently. On the side i'll make some bow-tie pasta or whatever ur favorite is.. some italian bread or a salad real easy & always yummy!

another thing: Pickup your fav. bottle of bbq sauce(LOVE sweet baby ray's honey bbq)...pour over a skirt steak (in a baking dish) with peppers/onions...make some rice on the side(uncle ben's boil-in-a bag..takes 10minutes!) or baked potatoe in the microwave..

Another thing with chicken: if u have some pasta in the house make some garlic & oil in a frying pan w/parsley...cut chicken into pieces & fry up...mix into ur fav. pasta w/some broccoli & top w/fresh parm

I made this the other night and it was super easy:

Take boneless chicken breast and slit them open so they have a pocket. Brown them lightly on either side in olive oil. While they are browning, in a bowl mix together 1 package of defrosted spinach, 1/2 cup of sour cream, 2 cloves of garlic chopped and shredded mozzarella cheese. After the chicken is slightly browned stuff the spinach mixture into the chicken. Place in the oven in a baking dish for about 15 minutes.

holy crap that sounds amazing!

Haha. Sorry I took so long to reply. Bread Balls are:

2 cups of Bread Crumbs
3/4 cup Parmesan Cheese
1-2 Eggs
Milk

Combine all ingredients except milk. Mixture will still be dry. Add milk until mixture is no longer dry. Should be sticky. (hehe) Shape mixture into ball shape and flatten them to about 1/2 to 1 inch thickness. Fry on both sides.

My mom used to put these in the pasta sauce with meatballs. I prefer them with chicken cutlets though.

Re: Dinner Ideas

I have a good one - I don't know if iknow it by heart but its soooo yummy...

Salsa Chicken

Boneless chicken (cubed into 1inch squares)
1/2 cup salsa
3/4-1 onion chopped
2 small cans of green chillis
Shredded cheese (I use low fat mexi blend)
Sour cream
Flour tortillas

Cut flour tortillas into long strips (1/2 inch wide) - coat with pam and bake for 5-10 min

Cover chicken with most of the salsa and and fry until cooked. Remove chicken and keep warm.

Wipe pan clean. Saute onions with a bit of olive oil for 2-3 min. Add chillis and continue to saute for 2 min. Add cheese until it melts. Pan will get sticky. Add sour cream (I don't do this step - dh doesn't like it and can't remember how much sour cream )

Line up a bunch or tortilla strips on your plates, lay chicken on top with a few more dabs of salsa, then layer onion mixure on top. Then enjoy! It ends up looking like mush but is sooooo good!
