Re: For all the bakers getting ready to make cookies.....

I'm soooo ready to bake again

I give my professional kitchenaid mixer such a workout every year. I literally make 10+ batches of cookies.... traditional german spice cookies (made with a 70 year old german rolling pin, of course), and recipes I made up over the years. The one I receive the most raves over are my hazelnut cookies

don't forget to stock up on parchment paper everyone

I make one huge vat of cookie dough, divide it in half, add choc chips to one half, and hazelnuts to the other.... so here's a recipe for the base batter, and how to add the hazelnuts to the mix. This is a fluffy/chunky batter, not a thin/chewy one....

sher's hazelnut & chocolate chip cookies

3 sticks unsalted butter - room temp
1 cup sugar
1/2 cup packed brown sugar
2 t (real) vanilla extract
2 extra large or jumbo eggs-room temp
2 cup flour
1 t baking soda
1 t salt

beat butter and sugars until fluffy (couple min on high on mixer). Add eggs and vanilla and beat until fluffy again. Combine all dry ingredients. On low, gently add dry ingredients. (Avoid overworking dough!)

Divide batter in 1/2. To one batch, stir in (by hand) 4 oz milk choc chips, and 4 oz dark chips. To the other batch, add 1 cup hazelnuts pulsed briefly in a food processor (so there are some tiny chunks, and some larger ones). Chill batters for 1 hour.

Preheat oven to 350 (always have oven thermometer to confirm oven accuracy). Put about 2T batter / cookie on a parchment lined cookie sheet. Bake 12-15 min, until it begins to be golden......

let cool a bit before removing from paper.

Re: For all the bakers getting ready to make cookies.....

every christmas my sister and i have a cookie baking extravaganza!

we make like 6 or 7 different types of cookies--and like 5-7 platters for different ppl! this year she has the kitchen aid mixer -- so we're gonna be making even more cookies than ever before!!!

we get little plates from party city and buy cookie holiday bags and make really festive looking trays for gifts for friends and family
