I tried making this tonight....I thought it would be simple, but I pureed fresh garlic, and it was very pungent. How do you make it?

Re: garlic and olive oil
do you mean garlic flavored olive oil (like infused)?
I think you have to slice the garlic and let it sit in the olive oil.
Or did you mean like garlic and olive oil w/ pasta?

Re: garlic and olive oil
If you want to make an infused oil I usually smash whole garlic cloves and put them in olive oil and heat it up so it's quicker.
If you're trying to make a garlic and oil sauce that's different so let me know.

with pasta!
I always used the minced garlic from a jar...but I wanted to try it with fresh garlic. I think I did not let it saute enough before I put it on..it turned green. I also used fresh garlic on garlic bread and had the same problem.

ahh, yeah, it probably just needed to cook more. I'm guessing there wasnt too much kissing going on at your house last night...and no vampires either lol
I either chop it or use a garlic press and cook it in the olive oil til it browns a little.

Yeah cook it on a low low heat in the oil when you start the sauce. If the heat is too high you will burn the garlic and then you should start all over.
You can also make roasted garlic-I like that because I'm not a huge fan of raw garlic.
Here's the way Giada DeLaurentiis makes it: She cuts an entire garlic head in half and sprinkles it with salt and pepper. She wraps each one in foil and cooks it at the same 475 deg F. for 1 hour.
This will make a lot so just pop out the cloves you want and cover the remaining and refrigerate.

Re: garlic and olive oil pasta
DH and I make this alot. I would chop up your garlic. (3 to 5 cloves) Heat your olive oil (3 to 5 tablespoons) until the oil in the bottom of the frying pan moves quickly. If you put one little piece of the garlic in it , it should sizzle. Once this happens add the garlic and wait for it to turn light brown. Whatever you do, do not burn the garlic...yuck. Simply pour the olive and garlic on top of your favorite pasta. I like to add parm on top too. HTH
