My recipe is a little different but basically the same...I come from the thick & sticky Alfredo school of thought Some people use no cream at all. That comes out awesome too but you have to eat it RIGHT away or it turns to glue.

1 box of fettuccine
1 stick of unsalted butter, cut into chunks.
1 1/2 cups Half & Half
1 egg yolk
2 cups Grated Cheese (Parmigianno Regiano is recommended)
Salt
Pepper

While the pasta is cooking, melt butter in a saute pan over medium heat

Beat 1 egg yolk and pour into cold half & half. (DO NOT just throw the egg yolk in the pan or you will make scrambled eggs)

Very slowly add the half & half with egg until hot. Do not boil the cream sauce, just simmer.

lastly - fold in 1 & 1/2 cups of cheese. Save the other 1/2 cup for sprinkling on top. I use Regiano but you can use any hard Italian cheese.

Toss with cooked pasta, sprinkle the last of the cheese on top, salt & pepper & enjoy!

See, I have to ask my DH again how he made it because I thought I saw him with eggs out too. I have a feeling he may have put an egg yolk in too.
