Hmmm making menus for the week is great! I try to do that b/c if i dont' i get lazy and we eat out. If the food is purchased we cook it!

Some ideas?

I am a fan of chicken tacos...a great go to.

I make a lot of chicken..so i buy marinades alot. Last night I baked chicken that was marinated in a honey dijon sauce...and i served it with corn on the cob, fruit salad and black beans.

I make an easy meat sauce that normally serves me for 2 days...
in a pan put in garlic and onions....brown a package of meat....then add a can of crushed tomatoes and season with pretty much anything (bay leaf, oregano, basil, salt, pepper, italian seasoning) and let that simmer for about 30 mins....DH loves it! and his family does too. its so easy!

Another thing (i'm making tonight) is i put a roast in a crock pot with potatoes, carrots and onions, I put a little bit of water at the bottom with onion soup mix and a beef boulion cube...then i let it sit for 5-6 hours....YUMMY!

I made some really good chicken last night.

Chicken cutlets seasoned with salt & pepper and a cracked peppercorn seasoning (pampered chef)
Brown then in a pan
(Remove chicken when done)
In same pan add big chunks of garlic (5-6 cloves)
or more if you like.
Brown for a little bit, then add Sundried tomatoes packed in oil. (I cut them into thin strips)
heat until warm enough for you.
Put crumbled goat cheese over warm chicken and top with tomato/garlic mixture.

Served with oven roasted potatoes and broccoli

This was very tasty!!!

I do!

Basically you want to brown chicken cutlets (seasoned with salt and pepper) in butter in a skillet, then set them aside. Add a little oil to the skillet and saute 1 large shallot (finely chopped) and a few cloves of garlic (minced). Add a little more olive oil and then add mushrooms and saute until they become tender (they will shrink down a bit). Season them with salt, then add about 1/2 cup sweet marsala and simmer until it reduces by half. Then ou want to add about 3/4 cup of chicken broth (low sodium) and some rosemary leaves. Put the chicken back in the skillet and then just cook until the chicken is heated through... turn it a few times to coat it in the sauce. Voila!

Shrimp or chicken scampi is a great go-to -sounds gourmet, soooo easy to make and delicious!!! ALso I don't know if anyone likes fresh fish but here's what I do:

Take 1 lb. flaky white fish (flounder, tilapia etc) already cut up into fillets. Place in butter-sprayed pan or in individual pieces of tin foil. Brush olive oil on top side. Top with Italian seasoned bread crumbs, salt, pepper, parsley, and a squeeze of lemon juice. If using packets, close packets of tin foil (not too tightly). Grill or bake packets (350 F) for about 8 minutes -fish should be flaky and opague. I serve it with asparagus and Spanish rice. Easy and healthy and quick
