i havent tried it yet but for xmas im making mint chocolate brownies. you just line the baking dish with crushed up mint oreos and then bake brownies on top of it. i cant wait to try these!

If you like chocolate, I have two AMAZING recipes, one for a Chocolate Truffle Pie and another for a cake that's called Too Much Chocolate Cake...both are INSANE!

RAINBOW COOKIES ARE MY SPECIALTY!

Rainbow Cookies

4 eggs, separated
1 (12.5 ounce) can almond filling
1 cup sugar
2 sticks unsalted butter, softened
1 teaspoon almond extract
2 cups flour
Red, yellow, and green food coloring (either liquid or gel food coloring), as desired
2 tablespoons seedless raspberry jam
2 tablespoons apricot preserves
1 cup semisweet chocolate chips
2 tablespoons unsalted butter

1. Preheat oven to 350 degrees. Grease 3 (8-inch) square baking pans.
2. Beat egg whites until stiff; set aside.
3. In another bowl, beat almond filling, egg yolks, sugar and 2 sticks of butter until well blended. Mix in almond extract. Stir in flour. Fold in egg whites. Divide batter into three bowls. Add red food coloring to one of the bowls and blend until thoroughly mixed (add coloring slowly until you reach the desired color). Do the same thing with the yellow food coloring, and then the green. Spread the batter into the three greased pans. Bake in the oven for 12 to 15 minutes, until a toothpick inserted in the center comes out clean. Let cool completely.
4. Invert the green layer onto a tray. Spread the raspberry jam on top of the green layer. Invert the yellow layer on top and spread the apricot preserves on top. Top with the red layer. Melt the chocolate chips and the 2 tablespoons butter together in a microwave. Spread on top of the cake. Allow the chocolate the set.
5. Carefully cut the cake into 1 ¼ inch squares. To make clean cuts: Heat the knife under hot water. Wipe the knife clean after each cut. Makes about 49 cookies.

I make soda cake for the kids...actually I take the recipe from here and make christmas cupcakes (and the adults eat them too).

this is what i was thinking of making. i think that's how starbucks has them.

my sister suggested also instead of crushed candy cane on the outside, to use peppermint extract in the cake and use milk chocolate on the outside. we'll see!!!

are these really hard to make?



not hard, just time consuming. the hardest part, honestly, is melting the chocolate at the end and putting it on top. also, cutting it perfectly is difficult too but i use a huge knife to cut them and it works well

I make struffoli, they are an Italian dessert and SO yummy!

2 1/2 cups flour
2 eggs
1/2 cup shortening
1Tbsp sugar
1 lemon, zest of
2 Tbsp Sweet Vermouth
1/2 tsp baking soda
1/2 tsp baking powder
16 oz honey
1 orange, zest of
1 orange, juice of


Sift all dry ingredients together.

Add zest of lemon.

Combine vermouth, eggs, and shortening.

Knead for 5 minutes.

Make a long rope out of the dough and cut into marble sized pieces.

Cover with plastic wrap.

Heat honey in saucepan over low heat.

Add orange juice and orange zest and simmer.

Set glaze aside.

Fry dough balls until they turn brown and blot the oil off onto a paper bag.

Place fried balls into a bowl and coat with honey orange glaze.

Top with more orange zest and non-pareils if desired.
