I ate my one year old wedding cake!
My parents came to visit and brought the frozen top layer of the cake with them. Instead of waiting until our anniversary (June 30) when my parents wouldn't be with us to share the moment, we decided to have it tonight. I am happy to report that it was actually good! The cake was amazing last year, and while it wasn't as good as the first time around it still had the flavor of one of those Mrs. Smith's frozen cakes with a heck of a lot more sentimental value.
It was really nice to get to relive a bit of that day....

So did I Valenia ... we had ours yesterday ... boy, ours was bad though - I don't think I wrapped it that good!

Happy 1 year! I'm glad the cake tasted good! That's one thing I'm not looking forward too...freezer burned cake!

Thanks for all the warm wishes. All credit goes to my mom for the excellent preservation job. She wrapped it in saran wrap (two layers) then aluminum foil (two layes) and then plastic bags (yes you guessed correct - two layers!). It was a bit smooshed and lopsided, but no sigh of freezer burn. hehe
