okayy here goes....You will need...
--SHRIMP (I used 1 lb.... Steve probably could have eaten more though!) -- peeled, and deveined, with tail on.
--1/2 cup EVOO (extra virgin olive oil)
--2 Tbsp. fresh parsley -- finely chopped (I use the cuisinart mini-prep!)
--1 Tbsp. hot pepper sauce
--1 lemon, juiced
--2 cloves garlic, minced (i also use the mini-prep for this)
--1 tsp. dried oregano
--1/2 tsp. salt
--1/2 tsp. fresh ground pepper
you might want to use skewers.. but I didn't and it was fine.
Mix together the EVOO, parsley, hot pepper sauce, lemon, garlic, oregano, salt and pepper... put a little bit on the side that you'll use to baste the shrimps with while they're cooking. Pour the rest of the mixture over the shrimp in a large plastic bag or tupperware. Leave it for about 2 hours (or at least 30 minutes!)
I cooked mine in the grill pan over medium heat... but you can make them on the BBQ too if you'd like... or you could even make them on the george forman (but you wouldn't have too much sauce left if you did).
So, cook them about 5 minutes on each side (or until they turn pink and start to curl up)... and pour the marinade that you put aside on it.... THAT'S IT!
I made mine with rice.... but it would be delicious over some angel hair pasta too! For more sauce, just cook the rest of the marinade in the pan with the shrimp...
